Pineapple Chicken Teriyaki Bento


I used a different recipe for teriyaki chicken - this one uses crushed pineapple, honey, shoyu, garlic, and ginger, and involved marinating the chicken pieces before oven baking. I'm not a fan of cooked pineapple in sauces but the kids liked it a lot. I guess because of the added sweetness in the flavor. Also packed in our LunchBots Quad: sweet cantaloupe, steamed Okinawan Sweet Potato, fresh corn, grape tomatoes, rice with furikake.

Pineapple Chicken Teriyaki Recipe 
(from Weelicious Cookbook adapted by Steamy Kitchen)

Ingredients:

1 (8-ounce) can crushed pineapple
3 tablespoons low-sodium soy sauce
2 tablespoon honey or agave nectar
1 teaspoon grated fresh ginger
1 small garlic clove, finely minced
4 boneless, skinless chicken breasts (about 2 pounds)

Directions:

1. To make the teriyaki sauce, place the crushed pineapple, soy sauce, honey, ginger and garlic a bowl, whisk to combine. Pour half of the teriyaki sauce in a resealable plastic bag and reserve the other half. Place the chicken breasts in the resealable bag, close and give it a good massage to coat with the marinade. Refrigerate for 30 minutes or up to overnight.
2. When ready to cook, turn on the broiler and place the rack in the middle position. Place the marinated chicken breasts on a foil-lined baking sheet and spoon some of the chunky pineapple/ginger from the marinade on top of the breast. It will help keep the chicken moist. Broil for 8 to 10 minutes on each side, for a total of 16-20 minutes. Discard any remaining marinade in the bag.
3. While the chicken is broiling, heat the reserved teriyaki sauce (that you had previously set aside in step 1) in a saucepan. Bring to a simmer and cook for 3 minutes or until thickened slightly.
4. When chicken is done, Slice the chicken, pour the teriyaki sauce over top and serve immediately.

Mediterranean Life Without Plastic Bento


There's actually a theme to this bento, kind of, instead of just a hodgepodge of miscellaneous foods, for a change! It's also vegetarian. I was going to make a bento grain bowl, but then I realized I could use one of the dividers in this Life Without Plastic container to keep the fruit separate. So now it's a ¾ bento bowl. The cauliflowerettes and purple carrots are roasted with olive oil and whole garlic cloves over lentils and quinoa topped with halved cherry tomatoes; cumin-spiced crispy chickpeas; and a beet-yogurt romaine salad. The kids like these beets because of the vinegary honey yogurt sauce. Also, I told MisterMan that beets are a natural stamina booster, so he asks for it on P.E. days now!


The cut fruit are a variety of orange-fleshed honeydew called Golden Dewlicious. It's pretty good but not as sweet as cantaloupe. I think the summer season for melons might be drawing to a close pretty soon. We'll have to take advantage of the last remaining fruit while we can. So sad! Has Fall arrived yet where you are?

Crispy Spiced Chickpeas
  • 2 (15-ounce) cans chickpeas, drained and rinsed 
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
Method:
Toss chickpeas with olive oil and spread in skillet (you can also roast in oven instead),
Fry (or roast) over medium heat until crispy, about 20 minutes.
Sprinkle with spices to coat all chickpeas.
Experiment with your favorite flavors, such as garlic powder, curry powder, cayenne pepper, Chinese five spice, Japanese togarashi - anything you like!

Beet Yogurt Salad
  • 3/4 pound beets (2 large or 8 small), trimmed
  • 3 tablespoons olive oil
  • 2 teaspoons sherry vinegar (or red wine vinegar)
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey, or to taste
Method:
Wash and dry beets, place in foil wrapper, and roast at 450F until fork tender, about 45 minutes, depending on size. When cool, rub off skins and slice into half rounds or smaller. Whisk together oil, vinegar, yogurt, honey, salt and pepper. Mix in beets - they turn the dressing a pretty shade of pink! Eat as is or atop salad greens of your choice.

Chicken Teriyaki Onigirazu and Makizushi Bento


Hi friends! This is my first attempt at onigirazu. Onigirazu is like a rice ball (onigiri) except it is square in shape and flatter, like a sandwich. In this way, you can have more fillings than inside a round or triangular ball. Onigirazu molds exist, just as they do for regular onigiri, but I didn't have a mold so I freehanded it - placing rice, chicken teriyaki, lightly sauteed asparagus, then more rice on a nori sheet. Then I folded it, wrapped in wax paper, and cut in half so it would fit nicely inside the Eshly Deli Box. I filled out the rest of the box with purple carrot flowers, tomato, broccoli, and a melon sampler. Have you been eating as much melon as we have? It has been a great summer for sweet watermelon, honeydew, and cantaloupe!


I thought it came out pretty well, and MisterMan seemed to like it. There are lots of possibilities for fillings, and it is a good way to use up refrigerator leftovers easily (ham and egg, tuna salad, tomato bacon lettuce, smoked salmon cream cheese, steak, hamburger, whatever!).

I decided to make TinySprite's chicken and asparagus inside a makisushi roll. I thought it might be easier (and more fun) for her to eat this way. And they fit nicely inside the LunchBots Clicks box, alongside some Dapple Dandy pluots and a sweet strawberry. This stainless steel box comes in a couple sizes and is great because not only does it have a leakproof lid but the lid is translucent so you can see what's for lunch! I love that effect a lot. So there we have a couple of nice cool bento for a warm summer day! Hope you are all enjoying your last bit of summer!

Oyakodon Ecolunchboxes Tri Bento


Oyako donburi is one of my favorite comfort meals. It consists of chicken and egg simmered together in a shoyu-mirin-sugar sauce with onions before adding to a bowl of rice with scallions. I added mushrooms and sliced red bell pepper to mine. Also, I cooked the egg completely instead of leaving it slightly runny since it will be packed into bento and stored at room temperature before eating. It may not be very photogenic, but trust me - it's delicious! I like this one-bowl type of meal because it's quick and easy, and it's a hit with the kids too. I put shichimi togarashi on mine, but they like furikake on theirs. Packed on the bottom layer of this Ecolunchboxes Tri Bento, I put some hapa rice (half white half brown) and scooped some chicken egg mixture over, topping with cilantro and chopped green onion, I put a romaine lettuce pickled baby cucumber fresh corn tomato salad in the middle with vinegar dressing and cracked black pepper, and super sweet fresh cut cantaloupe on the top. I asked MisterMan what he thought of this bento and he said "very good because there's lots of food inside!" Okay then. ^_^

Chow Mein Life Without Plastic Bento


We are using the Life Without Plastic lunch container again, this time with the removable dividers in place to test out the separating quality of the separators (last time I used the box with just a round cup in the center of our somen salad - that worked very well). MisterMan doesn't usually care whether the food happens to touch each other or the pickle juice gets into the strawberries, but I still wanted to find out just how much mixing occurs. I did use a silicone cup for the pickles, as I usually do, but I probably didn't really need to.


I placed chow mein in two of the four sections, then fruit (cantaloupe, raspberries and strawberry) in one of the remaining sections and sliced Okinawan sweet potato and pickles in the last. The box held everything together without much movement of the food inside; nothing leaked or spilled. Yay!


I used spinach noodles for the chow mein, and stir-fried fresh green beans, chopped baby bok choy, and beech mushrooms alongside. I seasoned with oyster sauce and shoyu to taste, plus garlic and onion. Top with a drizzle of sesame oil and chopped green onions. Quick, easy, and tasty!

Jack-o-Pepper Egg Salad Halloween Bento

For TinySprite I made egg salad, but instead of a pocket sandwich (which I usually do with this type of filling so that it doesn't fall all over the place) I packed it inside a carved orange bell pepper. I found a pepper that looked pretty pumpkin-like, but was so much easier to carve than a real pumpkin! (Although this is a regulation sized bell pepper, you might like to view my tutorial on carving a mini bell pepper here) I lined it with a spinach leaf to keep the filling from oozing out of the eyes and mouth. I didn't send along the top (although it might have been handy for ensuring safe travels). Along with the jack-o-pepper egg salad, I sent a cup of pickled veggies, some grape tomatoes, strawberries and cantaloupe. Happy Halloween week!

Ma Po Tofu Bento Bowl

My "dry" ma po is perfect for bento because it minimizes leakage in bento format. I served over rice in the cute apple bento bowl, and you can top with chopped green onion or cilantro. Since my version is almost chili-free, I add spicy chili sauce after the fact into my own bowl. The top tier contains chunks of super sweet cantaloupe and scattered strawberries because we're kind of low on fruit these days. The kids gobbled so much down there wasn't any leftover at all for my next day lunch. Aww!

Samosas Bento

I made samosas, for only the second time, and I think they came out kind of okay. I took a few liberties with the recipe, which I can't remember the source of (it was from a cookbook that I borrowed from the library, and I forgot to note the title). I put the recipe below. If I can find the book again, I'll add the proper reference~! Anyway, I used leftover wonton wrappers, and served with cilantro chutney. GOOD. For the kiddie bento, I packed some samosas in a homegrown lettuce lined compartment (I used EcoLunchBox Three-In-One), with a couple of grape tomatoes. On the other tier I added cubed cantaloupe, grapes, strawberry, corn off the cob, pickled cucumbers and red onions. Done! And Success!

Curried Vegetable Lentil Samosas

1 1/4 cup mashed cooked peeled baking potatoes
1/4 cup cooked yellow lentils
1T minced fresh mint (I actually omitted this)
1t Madras curry powder
1t butter, softened
1/4 t kosher salt
1/4 t ground cumin
1/2 cup frozen petite green peas, thawed
10 egg roll wrappers (I used wonton wrappers and I think it worked fine)
1 large egg, lightly beaten
cooking spray

Combine potatoes, lentils, mint, curry powder, butter, salt, and cumin. Gently fold in peas. Spoon into wrappers. Fold into triangles. Coat with cooking spray and fy in skillet 1 minute each side. Drain on paper towels and serve with chutney.

For Chutney:

1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves
1/4 cup chopped red onion
2T fresh lemon juice
1T water
1/4 t kosher salt
1/8 t sugar
1 serrano chile, coarsely chopped (I omitted this)
1/2 inch chopped fresh ginger

Process in blender until smooth. Set aside.

RAWR! It's Totoro! Yeah, I know it looks weird. But really, it is Totoro. You may have to just take my word for it. It's a nitrite-free pepperoni/mushroom/cheese calzone made with whole wheat dough. And I was pleased that the ears stayed on this time instead of snapping off. Woo! I put some tufts of garden lettuce around him to make him feel at home, and his face is made of mushroom and nori (stuck on with rice sticks). The other side of this cool divided Sistema - like box holds cantaloupe, grapes, plum, and pickled stuff. One more day and the weekend's here! \(^__^)/

Salmon LunchBots Brainfood Bento

Second bento of the school year, and I fell back on another easy one. Salmon! I like to prepare salmon about once a week because I think it's good "brain food" for the kids, packed with healthy omega-3s and all. I usually pan fy the fish in butter or olive oil, and just after I turn off the heat, drizzle shoyu around the pan. I served TinySprite's helping over roasted garlic potatoes and kale chips (I didn't pack the kale chips because they get soggy overnight. If your kids don't mind, you can pack them in the bento too. They're very tasty!). She also gets a cabbage carrot daikon slaw with vinegar dressing and topped with halved cherry tomatoes. Her fruit treat includes green and purple grapes, and super sweet cantaloupe. This time we used the LunchBots Trio. I made this one myself, since the kids were at an afternoon activity until late, but it only took me a few minutes to do. Thank goodness it's a short week. I'm already ready for the weekend; how about you?

The Mid-Summer Bento: Tebasaki in EcoLunchBox!

Helloooooo out there! Is anybody still out there? Or are you all on the beach, kicking back and letting the kids live out their summertime dreams? If you're like us, you've been milking every minute from this long-awaited summer. We took off the very day after the kindergarten graduation ceremony back in May. Literally. Of course, after all the fun at Legoland, Disney, museums, beach, camping, county fairs, concerts, and poolside, the kids still have to eat. But guess what? MisterMan has been picking up the ball and making bento for himself and his sister throughout their summer programs. Score! Me -- since I've been on bento hiatus I haven't even booted up the laptop much less brought out the camera setup to take any photos. But I have been taking phone pics of his creations, and I really want to show you a sample of his handiwork. You know, later.
So yes, I've been enjoying my summer too, bento-wise. However, I did manage to make their bento today, just because I kind of missed it. This simple bento contains tebasaki (crispy chicken drumettes and wings, see the method and recipe I use here); vinegary two-color cabbage slaw; fresh corn-off-the-cob; pickled cukes, carrots, daikon and red onion; cherries; and cantaloupe. All packed up in the very practical and stylish Ecolunchbox Three-in-One. I think I did okay! This is my token mid-summer bento contribution, to keep my chops fresh. Lil' Sandwich Rollups EcoLunchBox Bento

Even though my kids usually eat the "dinner leftovers" type of bento quite often, they are just like all other kids and love the bitesize sandwich rollups too (maybe even more). My kindergartner always prefers to eat with her fingers so a bento like this is a hit with her. Since there isn't anything saucy to drip out, a bento like this is ideal for the EcoLunchBox Solo Cube. I secure it with an elastic band and it's good to go. Besides the whole wheat spinach brie and turkey rollups (I flattened the bread with a rolling pin first), I packed a cabbage onion tomato slaw, a cup of juicy cantaloupe, a strawberry, and some blueberries. This will just about satisfy her appetite, I think!

Nyan Nyan Nyanko Kitty Egg Salad Bento

Guess what? I didn't feel like cooking for the bento today! So lucky TinySprite gets her favorite egg salad pita pocket sandwich. I tucked some shredded spinach into the whole wheat pocket before spooning in the egg salad mixture (this batch contains celery, onion, yogurt, curry powder and turmeric, salt and pepper). Then I decorated a radish slice with a nori kitty face. Ears and paws are also radish pieces. I snuggled some silicone cups of cantaloupe chunks, the absolute last strawberry, carrots and sesame slaw in this Chococat box as well. Happy weekend everyone!

Shamrock Pepper Fried Rice St. Patrick's Day Bento

Here's my contribution to St. Patty's Day, since it falls on Sunday and this will be our last bento before then. A four-leaf clover! Can we call it a shamrock if it has more than three leaves? My pepper happened to be four-lobed, so this is the shape we're going with. I fried a beaten egg inside the pepper ring, and then sprinkled some chopped spinach on top. It sits atop a bed of fried rice mixed with ham, edamame, egg and shoyu. I make sure to cook the pepper ring egg thoroughly, as it's not safe to pack uncooked egg for extended periods at warm temps. Alongside the lucky rice: cantaloupe chunks, and pickled cucumbers and onions. Happy St. Patrick's Day!

So Cute TinySprite EcoLunchbox Cube Bento

Wow, I just realized that I've taken a week-long hiatus from bento-posting. I kind of missed you all! After Halloween last Wednesday, we had the following two days off (for parent-teacher conferences), so we spent the long 4-day weekend at the coast. We stayed in Aptos, a town on Monterey Bay, and explored Pacific Grove, Santa Cruz, and most of the rest of the quaint towns in between. The kids had fun at the Monterey Bay Aquarium, and we built sand sculptures on the beach and visited a real lighthouse. After we got back, what with the time change and all the election excitement, blogging fell to the wayside. But now I'm back! Today's bento is another cute one using the EcoLunchbox Solo Cube that is my current favorite box. I decided to squeeze in four silicone cups to fill with a variety of goodies. From upper left: two hard-boiled quail eggs and skewered nitrite-free salami, pickled cabbage and cucumbers, steamed corn and broccoli, and a fruit mix of cantaloupe, blackberries and raspberry. It turned out to be just enough for my kindergartner's highly unpredictable appetite.

Speaking of the awesome Ecolunchbox, I picked a winner from among the 50+ of you who commented on my giveaway post (fantastic, clever, ingenious ideas for going green, by the way~! I loved reading each and every one of them!) -- it was Michelle, who uses flannel baby wipes and cotton diapers. Wow! Chili Rice Panda Bowl Bento

This was the result of my last crockpot meal: turkey chili with beans and vegetables. And this bento is MINE! I packed the two kids' lunches in their thermal jars in the morning, and didn't feel like taking the time to snap a picture. I don't know when the last time was that I made a bento for me, but I am going to start doing it more often. I used the cute panda bowl bento set, which is perfect for rice bowls. When I was a kid growing up, my favorite thing to get at Zippy's was chili rice. That's how you order it: chili rice. I loved it for a long time until someone told me you get a lot more chili if you order chili cracker instead. I can see the logic there. After all, there's only so much chili you can pour over a giant scoop of rice. So I switched to chili cracker, but I always loved chili over rice. So I made it for myself. This chili is so jam-packed with healthy stuff you practically get younger after you eat it. There's tomato, carrots, zucchini, kidney and black beans, ground turkey, onions, sweet peppers, and kale. I topped mine with grated cheddar and a sprinkling of cilantro. Really hits the spot on a brisk fall day, don't you think? And I prepared a fruit tier for myself too: fall pluots, cantaloupe balls and three raspberries. And I cleaned it all up!

Slow-Cooked Turkey Chili

1lb. ground turkey (or whatever meat you like, or you can omit this entirely)
2 cans kidney beans, black beans, white beans, or other beans of your choice
1 32-oz. can crushed tomatoes
1 8-oz. can tomato sauce
1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, chopped
1 carrot, sliced
1 bunch kale, chopped
2 zucchinis, chopped
1 tsp. chili powder (or 2 tsp, if you like)
salt, pepper

Brown the meat in a skillet and drain. Add to slow cooker along with all the other ingredients. Cover and cook on high for 4 hours or low for 8 hours. Garnish with cheese if desired.

Quesadilla Corn Salsa Bento

This was MisterMan's bento from last week. I didn't get a chance to post it then, but it turns out to be relevant for today's twittercornparty. How nice! I made some rolled corn tortilla "quesadillas" which I love to use this LunchBot for (since they fit so perfectly), and made some black bean, tomato, corn and cilantro salsa on the side. I tucked a couple of carrots in the lettuce cup as well. The delicious fruit section contains ultra-juicy cantaloupe, super-juicy pluots and fresh local cherries. Okinawan sweet potato "fish" add colorful decor to the bland tortillas. I attached the little fish to the tortilla with rice sticks through their eyes.
For our twittercornparty I made a variation on Fu Fu balls, which are a traditional West African (and Caribbean) staple made usually from steamed plantains or yams. I made mine using Japanese sweet potato (satsumaimo), cornmeal and fresh corn kernels off the cob. After steaming and mashing the imo, I added cornmeal mush until I got the consistency I liked. I stirred in the corn kernels, and added butter, salt, and parmesan to taste. I shaved some parmesan on top too. Voila!

Hey, I just realized this is a Meatless Monday bento. Maybe I'll try to make a habit of it? Happy Monday ^_^

The kids got to pack Copper River Salmon in their bento today; I made a teriyaki glaze for them. I also roasted some quartered baby new potatoes in olive oil and a little black pepper. They really love those. There's more of the beautiful Okinawan sweet potato (which I love), steamed broccoli, and bicolor corn on the cob with the various fruit of summer: cantaloupe, strawberries, cherries, grapes. Oop, forgot the pluots. They'll definitely make it into the next set of bentos. Until next time!

Triple Mochiko Chicken Pool Bento

Guess what? If you guessed another shared pool bento, you're right! Yes, I'm really getting hooked on these stacked stainless steel tiffins. I have this round tiffin in one-, two- and three- tier sets. What, overkill, you say? Pshaw! Actually, each has come in handy several times within the past year. There's also a four-tier version which I am wondering whether I should pick up too. After all, we are a four-person family!

Anyway, getting back to this three-tier one: the three bowls stack upon one another, with the bottom one slightly larger (mine!). They latch together tightly so that only the top tier needs a true lid, and it's a cinch to carry. Really thinking about using these tiffins throughout the entire summer so you may be seeing them quite a bit. Today I've given each of us some oven-baked mochiko chicken. The sides vary but include: steamed bi-color corn (surprisingly sweet!), steamed broccoli, crunchy carrot, Okinawan sweet potato, and summer fruit! White peach, nectarine, cherries, pluot, black velvet apricot, strawberry, cantaloupe and lychee!!
The best of the summer fruit, as far as I'm concerned, is lychee. This year's batch is sweet, juicy, and surprisingly small-seeded. Don't be put off by the greenish hue of the skin. I too was surprised by what I've always expected to be bright red, but the fruit inside is indeed ripe and tender. The skin is tougher and thicker (and harder to peel) than I'm used to, but nothing that my adept fingernails can't handle. So far I'm very pleased. I'll leave you with a couple pics of the bento eaters in action at the pool. We had a fantastic time hanging out together, swimming in the big pool, learning to sit-dive, and chowing down our grinds. MisterMan's summer program starts tomorrow so we won't be swimming together for awhile. Gonna miss him.. but he's looking forward to playing with his buddies!
