Totoro Calzone Bento


Aw, it's Totoro! You may have to use your imagination, though. I made pizzas for dinner, and always try to make some kind of cute calzone at the same time. You can see my past attempts if you do a search in the blog search bar. I know, I made his chevrons wrong. Shoots! He has a spinach leaf umbrella, and a tomato balloon. I hope he's happy! And I hope you are too ^__^

Halloween Spider Calzone Bento

It's October people! And you know what that means... Halloween is just around the corner! I've always found Halloween bento to be the most fun to make. I have more from this holiday than any other (even Christmas) for some reason. And why not, when there's so much you can do with the theme. Let's start with a spider. You can make a cute spider, did you know that? The calzone contains the usual: cheese, pepperoni, spinach and mushroom. I put TinySprite's in a box with some homegrown lettuce, and added some sliced nectarine, grapes and strawberries on the side (so he doesn't get soggy). MisterMan got his in the compartmentalized Sistema box, which works equally as well for this kind of food. Happy Halloween!

RAWR! It's Totoro! Yeah, I know it looks weird. But really, it is Totoro. You may have to just take my word for it. It's a nitrite-free pepperoni/mushroom/cheese calzone made with whole wheat dough. And I was pleased that the ears stayed on this time instead of snapping off. Woo! I put some tufts of garden lettuce around him to make him feel at home, and his face is made of mushroom and nori (stuck on with rice sticks). The other side of this cool divided Sistema - like box holds cantaloupe, grapes, plum, and pickled stuff. One more day and the weekend's here! \(^__^)/

Mama Loves Her Bunnies Bento

It's Mother's Day this Sunday, so I'm sending my kids to school with a reminder of how much I love them. I can still give them both a big squeeze just like this, which I love to do! Even though they are 9 and 6, and growing bigger every day, I'm going to keep squeezing them. Every chance I get. I made TinySprite a calzone with spinach, mushroom and cheese, her favorite. A little broccoli and pea pods fill in the spaces, along with the usual pickled onions, strawberries, carrots and nectarines. How will you celebrate the mothers in your life? Happy Mother's Day!

Gold Rush Retreat Bento

I made a special field trip bento today, because MisterMan is going on a retreat to Gold Rush Country! It's probably cold, rainy and there may even be snow on the ground, but he is super excited to try his hand at panning for gold and all that old forty-niner lore. He LOVES history, and he'll be getting first-hand experience of California's heritage. I packed some appropriate food for him to eat on the way up there: shovel-, pick- and gold nugget-shaped pizza rolls (or calzones) to aid in his gold-mining efforts. There's also: grape tomatoes, steamed Moloka'i Okinawan sweet potatoes, a hard-boiled egg, carrots, strawberries, a cup of his favorite pickled cucumbers and onions, and some dried apricots. I also gave him a bag of kettle corn to munch on. The boy's going to need all the nourishment he can get! Go west, young man -- there's gold in them thar hills!

As for TinySprite, she'll be taking a cute doggie calzone to school with her...

Gotta love the calzone for the ease and fun factor, not to mention the fact that it's a no-brainer to pack. Especially when you have the Sistema compartmentalized bento box. I've come to think of this box as my calzone box since that is what I've been packing in the large open section; you can also fit a standard sandwich or even a burger. It's not practical for messy foods since the two halves come together and become inverted after closure, but it works quite nicely for breads. Can you see the bear? I added some facial details with extra dough, a party hat for fun, and filled out the other side with grapes, strawberry, broccoli, tomatoes, and cara cara oranges.

Rudolph Calzone Christmas Sistema Bento

Only two weeks to go until Christmas, and I'm happy to present my first Christmas themed bento for the year! Heh. Oops. I should look to my past Christmas bento flickrset for inspiration, I think. Anyway, this one boasts a reindeer-shaped calzone, which became Rudolph with the addition of a red button nose pick. All I did was glue on some nori eyes (with honey) and I was done. Woo! There are a couple of pizza slices underneath Rudolph, packed in one half of my new Sistema Bakery bento box. The box says that the volume of this BPA-free divided box is 630ml, which might surprise you. The tight-fitting (leakproof) lid is domed, allowing extra space for bulky food items. Plus, it costs less than $7~ I love this box! The other side was just right to fit a little satsuma mandarin, a handful of blackberries, a grape tomato and a cup of pickled cucumbers. Toss this box into the lunchtote, and you don't need to worry about anything. TinySprite can see exactly what she has for lunch, and she made sure there wasn't anything left to bring home. ^_^

Domokun Calzone Bento

I made fun calzones for the kids; using regular pizza dough for MisterMan and the Gluten-Free On a Shoestring recipe for TinySprite. I filled with a variety of meat (pepperoni, salami and ham), plus arugula and cheese, then for Domo I sealed it up in a vaguely rectangular shape. While the dough is still sticky (don't dust with flour), add on some little dough pieces for arms and legs. They'll stick there without falling off throughout baking! I'm showing you MisterMan's version here. This version will puff up during baking because it's a regular yeast flour dough, but the gluten-free version will just sit there and look just the way it looked before baking. In a way, it's easier to bake creatures using gluten-free dough for that reason. But I think puffy Domo looks kinda cute. I put some red capsicum and cheese details on his face, along with black capsicum eyes, and tucked him into the stainless steel tiffin with some steamed broccoli. The upper tier contains steamed corn off the cob, carrots, blackberries and blueberries, strawberry, lychees and plums.

Hello Kitty Gluten-Free Calzone Bento

I tried another gluten-free pizza dough this time; using Nicole Hunn's recipe at Gluten Free on a Shoestring. If you haven't worked with gluten-free dough before, you'd be surprised at the texture, but she explains what to expect, and my dough looked just like the picture she posted. You have to pat the dough out, since it doesn't stretch like regular pizza dough. It works well for calzones too, which is what I made for TinySprite's bento here. Since this dough doesn't stretch and just kind of sits there, it's actually just right for making cute calzones like this Hello Kitty. I just patted out a circle, put in my fillings (spinach, zucchini, pepperoni and cheese), folded in half to close, and added extra dough pieces for the ears and bow. After baking, it came out just the way it looked when it went in. I added nori eyes, but I should have made whiskers and a nose so she's recognizable. Can you see her? The rest of the bento contains carrots, peapods, a couple of beet-dyed cherry-shaped quail eggs, blackberries, blueberries and cherries. Do you think TinySprite liked this one? (Yep, she did) ^_^

Gluten-Free Pizza Dough (from Gluten Free on a Shoestring)

2 cups all-purpose gluten-free flour
1 1/2 teaspoons xanthan gum
1 tablespoon active dry yeast
1 teaspoon sugar
3/4 teaspoon kosher salt
3/4 cup warm water (about 100 degrees F)
3 tablespoons extra-virgin olive oil (plus an extra tablespoon or two for drizzling)

1. In a medium-size bowl or the bowl of your food processor, place the flour, xanthan gum, yeast, sugar, and salt and stir to combine.

2. To the flour mixture, add the 3 tablespoons of olive oil and the water in a steady stream, either pulsing in a food processor or mixing with a spoon or fork to combine. If you are using a food processor, pulse while streaming in the water, until a ball begins to form. Otherwise, stir constantly while streaming in the water and continue stirring until the mixture begins to come together. If the dough seems super sticky, add some more flour a tablespoon at a time, and stir or pulse to combine. Press the dough into a disk.

3. Place the dough in another medium-size bowl and drizzle it with olive oil. Turn the dough to coat it with oil. This will prevent a crust from forming on the dough while it is rising. Cover the bowl with plastic wrap and place it in a warm, draft-free area to rise until doubled in volume (about 1 hour).

4. After the dough has risen, wrap it in plastic wrap and chill for at least an hour before rolling it out.

5. To make pizza, roll between two pieces of plastic wrap. Create a crust by rolling in the edges, brush the dough with olive oil, and blind bake it at about 400 degrees F (that is, bake it plain, before topping it) for 5 to 7 minutes, sot he crust begins to crisp. Then, top it with sauce, cheese, and whatever else you have in the fridge, and return it to the hot oven until the cheese is melted, another 5 to 7 minutes.

Easter Bunny Calzone Bento

Yes, I know Easter was yesterday, but you know I had to make a bunny calzone, right? I saw so many pictures of cute little bunny breads working up to Easter that I thought: how adorable and easy! Well, not that adorable or easy in reality. Can you see the bunny? Don't lie; it's okay -- I gave my kids unlimited guesses and they never got it. I guess I should have drawn a face in front so you can tell it's sitting there with two front paws and long ears laid against its back. I even made hind legs and a cottontail! I should have put a carrot in its paws as well. Now that would have been cute! He sits in his Sistema multicompartmental box with some broccoli, carrots, clementine, grapes, strawberries, and a lone Okinawan sweet potato star. Hope you all had a wonderful Easter weekend!

It's calzone day today - filled with pepperoni, ham, mozzarella, and arugula - and I didn't take the time to make any particular shapes but when they came out, I thought they looked like chubby crabs. So I added a scrunched face and that's what we're calling it. Luckily MisterMan's fit inside his Sistema box perfectly. I like this box for calzones because the sections are pretty tall and can accomodate a chubby calzone very well! The other section contains cara cara oranges, blackberries, strawberries, carrots, broccoli and grapes.

Calzone Flowers Lunchbot Bento

Welcome to the first day of the Lunar New Year! The kids happened to have yesterday off, so we spent the long weekend celebrating with family. And today's bento has meat! It's a meaty calzone I made with whole wheat dough, containing pepperoni, ham, mushrooms, arugula, tomatoes and mozzarella. I had to slice it so that it would fit in the bento box, and decorated with Okinawan sweet potato flowers with peapod leaves. I rounded out the meal with a giant strawberry, some sliced kiwi, grape tomatoes, grapes, carrots, and sweet yellow pepper rings. You can see that after the dragon tour de force, I am now back to my usual "plain" quickie bento arrangements, which take much less time but which can still look fresh and appetizing due to the addition of colorful, seasonal fruit and veggies. I am a big proponent of local, seasonal ingredients for bento; the fresher it is, the less preparation (and even cooking) you have to do. And who doesn't love that?

Three Bunnies Meatless Calzone Bento

Using the Sistema box to house the ever-popular calzone bento today. I asked the kiddos whether they preferred pizza or calzones and they chose calzones. Go figure. While they aren't much to look at (at least mine aren't), they are pretty colorful and exciting inside. I used red pepper, eggplant, grated zucchini, grated kabocha, arugula and cheese. TinySprite watched me make them, and handled the dough a bit. Since they're kind of hard to close (what with all the fillings), I did most of the manipulation. She watched me adding the grated veggies and was fooled when I put in the grated kabocha, since it looks exactly like CHEDDAR. Hehehahaha! This is really the best box to hold a calzone, because it stays separate from the rest of the stuff and doesn't really need to be immobile. Well, except for the Okinawan sweet potato bunnies, which will likely fall off. The rest of the colorful sides include: orange wedges, cherries, strawberry, grape tomatoes, carrots and cucumbers. So fresh, it could almost be a spring bento!

It's a calzone bento, kind of, except this time I rolled up the dough with the fillings inside (salami, pepperoni, cheese, spinach), then baked and sliced into little bite-sized pieces for fun. Yeah, I'm having way too much fun with the calzone-styled foods. It's such a convenient, sandwich-y way to pack a school lunch bento, with so many filling possibilities. The rest of the bento contains roasted red kabocha, steamed Okinawan sweet potato slices, and a cup of grapes and raspberries.

The last Halloween bento of the season! Monster finger calzones with almond fingernails. One of them even has a bloody wound, which was unintentional but actually looks pretty real, right? There's also carrots, broccoli, strawberries, raspberries and "diced" dragonfruit. Get it? Happy Halloween from the conflicting forces in our house! Hope you had a safe and scary night with lots of goodies in your candy haul!

Jack-o-lantern Calzone Bento

Yes, it is in fact a Jack-O-Lantern calzone! Kind of. Instead of the half moon shape, I tried to make it rounder by closing it on the bottom instead. I found that it's not easy to cut a jack face into a calzone. I didn't want the innards to run out, so I didn't cut all the way through. And I think I made the features too small, for the same reason. Anyway. There he is, and I'm calling him a jack-o-lantern, so there! Also in the container: carrots, kabocha, Okinawan sweet potato, broccoli, star-cut radish, orange wedges, and grapes. Two more weeks to go. Can I do it??

Werewolf Calzone Field Trip Bento

MisterMan has a field trip to the wildlife museum, so I thought it would be appropriate to make a werewolf calzone for him to take for lunch. I think my last werewolf bento may have been cuter. Anyway, in addition, it fits in with the Halloween theme too. On the upside, my calzones are really starting to look calzone-shaped. On the downside, I guess it doesn't look all that werewolf-shaped, does it? I tried to make furry edges and pointy ears, but I didn't have enough extra dough for that. I hope the radish and yellow and purple carrot eyes, mouth, and fangs help. This one is stuffed with pepperoni, salami and ham, plus spinach, thin sliced zucchini, baby portobellas and cheese. I think it would be fun to form a plain roll (and easier too). Maybe I'll try that sometime. The rest of this disposable container holds corn, broccoli, carrots, Okinawan sweet potato, peapods, peaches, grapes and strawberries. I kept the calzone separate with the wax paper between. When I closed the box, he fit perfectly, peering out the window. RAWR!

Totoro and Bear Calzone Bento

Today the kids get calzones again! I used roasted red peppers, caramelized onions, lots of cheese, and baby arugula in the meatless ones, and salami and pepperoni in the meatlover ones. Love them. MisterMan got Totoro, with radish and nori eyes and nose, and soba whiskers, and TinySprite got a brown bear.
The rest of the bentos contain broccoli, peapods, carrots, corn, plum, strawberries, blackberries and grapes. Love this pizza and calzone week. Super fun and easy, and everyone's happy! P.S. I think I'm getting the hang of shaping them now. No puffy pig snouts!

Piggy Calzone Bento

I was so happy with the way my pizzas turned out, I decided to make calzones. I rolled the dough (use any pizza dough for this) out into circles, then placed chopped ham, pepperoni, grated cheese and baby arugula on half, and folded the circle in half, pinching to seal the edges together. For fun, I added two balls for ears (which I rolled in flaxmeal), and a little circle for a snout. I intended for it to result in a cute bear face, but the snout rose during baking and I think it looks more like a pig snout now. So a piggy it is. The calzone fits perfectly in one side of the Sistema box, while the other sectioned side contains: corn, broccoli, carrots, pluots, nectarines, grapes, strawberry and lychee. Oink!
