Chicken Salad Onigirazu Bento

TinySprite is in high school now, can you believe it? Time flies; seems like only yesterday she was in preschool and enjoying her little snack bento at home.

After school these days she has only a short break before extracurricular activities so I decided to make her a little snack bento to tide her over. This one is onigirazu, which is a handheld rice ball filled with various proteins and veggies. Today I made a filling with the ingredients of our chicken salad from yesterday. First thing I did is lay out all tools and foods I'll be using.

I scoop the rice into a small ramekin for two reasons: it helps measure the portion size and it makes a nice compact round flattened rice ball in the center of the nori, placed shiny side down. My rice is a mixture of red, white and brown.

Next, pile on the ingredients you've chosen. Try to stay neatly on the rice patty. I used shredded romaine lettuce, shredded carrots, sliced purple radish, shredded chicken, some dressing, then more lettuce. Be creative and use whatever you like!

Sorry I didn't take process photos of the folding but I folded the bottom right corner in first, then the top left over that, then the two other sides. I used parchment paper but you can also use plastic wrap.

You're left with a nice neat package that you can then slice in half for visual appeal. Or you could keep it a surprise!

I sliced mine because I'm excited to see how it looks. Try to remember which way the lengths of lettuce and chicken go so you can make a crosswise cut.

Pick a box that's small enough to keep the onigirazu from moving around. A clear lid lets her see what she's getting, and it looks so pretty and colorful. Snap the lid closed and you're ready to go. Hope she likes it!

Update: I think she liked it๐Ÿ‘๐Ÿผ

Mac and Cheese Bento

I put roasted grape tomatoes on top of today's (whole wheat) mac and cheese to add a little color and also to check out these super cute new leaf picks from Modes4u. I think they are meant to be radish, tomato, and some kind of sprout leaf tops. So creative and fun!

Also in our Lunchbots Trio: little pita triangles topped with protein-rich nutrition, kiwi and the ever-present (as long as they're in season which I hope is at least another month) blood oranges.

Happy Bento-ing! ๐Ÿ˜Š❤๐Ÿฑ

Furikake Salmon Lunchbots Bento

Two in a row! I'm on a roll now.

I recently learned that to ensure a crispy salmon skin you need to remove all the moisture from the fish first. I patted the filet with paper towels and let it air dry for a while before pan frying. Came out good! I love salmon and cook it once a week. I eat mine very simply with a bowl of ๐Ÿš or on a salad๐Ÿฅ—. So ono๐Ÿ˜‹

In TinySprite's Lunchbots Trio: furikake salmon on soba noodles, assorted vegetables (broccoli, asparagus, tomato, carrots, edamame, Okinawan sweet potato), kiwifruit, pickled radish and red onion.

First Day of Spring Bento!

First day of Spring and of course it's gray and cloudy outside. So we'll celebrate with a cheerful bento!

Inside our Yumbox: quartered cheese - tomato - lettuce - avocado toasted sandwiches (skewered because I saw trhe idea in Sarah Michelle Gellar's cookbook "Stirring Up Fun With Food" [I really don't have any affiliation with her or her publisher; I just happened to find a few cute ideas in there]๐Ÿ˜†), mini peppers stuffed with cottage cheese, sunflower seeds and a bit of granola, cara cara oranges, steamed Okinawan sweet potatoes, corn, radish ladybug, and chocolate raisins.

One nice thing about the cool weather is my sweet violets love it! Mine are the super fragrant pink "Rosina" variety. Happy Spring, friends!

Happy Girls' Day Bento!

In Japan, Girls' Day (Hinamatsuri, ้››็ฅญใ‚Š) is celebrated on March 3. On this day we wish for the health, success, and happiness of girls. My TinySprite is 10 years old, but not too old to enjoy a sweet token of my love for her. I hope she likes her Hello Kitty bento treat. Happy Girls' Day!

In this bento: hard boiled egg, radish, carrot, blood orange, snap peas, wild blueberries, mandarin orange.

Werewolf Bento

Raaaaaaawr!
What's Halloween without a werewolf bento? A piece of jagged cheese on a mini whole wheat bagel, and a few nori cutouts make this one not-too-scary. Also in our LunchBots Clicks: edamame skewer, carrots, radish, and grapes. I wish I had a wild animal type of fork to use for this lunch; that would have been cool. Good thing we have the upcoming weekend to get ready for the trick-or-treaters; if this year is anything like previous years, we're going to have to majorly stock up. Like bulk candy Costco run!

Puppy Pals Mini-Sandwiches Ecolunchboxes Bento

These are the same Kings Hawaiian bread dinner rolls I used for the Hinamatsuri bento. Turns out they fit perfectly inside the Ecolunchboxes Solo Cube container too! Ham and cheese with lettuce sandwiches again for the little girl. This time I decorated the tops with cheese and nori for puppy faces. They are holding hands. Awww! The rest of the box contains: grapes, heart-shaped radishes, Okinawan sweet potato, blueberries, satsuma mandarin, and broccoli. I can get used to making these cute little mini buns bento. So easy and fun!

Hinamatsuri Girls' Day Bento!

For TinySprite this Girls' Day, I made her two mini ham sandwiches with lettuce and cheese. These rolls (King's Hawaiian sweet bread - so good) fit perfectly inside this two tier box that I think I got from Daiso many years ago. It even matches this fork with the same bunny design on the lid. Alongside the ham and cheese dolls with nori and pepper details, I have a purple sakura (Okinawan sweet potato), carrot flowers, blood oranges, kiwi, and a fan-cut radish. Happy Girls' Day to all the little (and big) girls out there!

Panda Rice and Chicken Bento

Just a little more of that unbeatable (for me) comfort food combo: chicken and rice. I used the Vietnamese Soy Chicken Drumsticks recipe that I've made several times before (you can see my version and the link to the original recipe here). So good. Sometimes I pack the drumsticks whole, but today I pulled the meat off the bones so I could arrange a cute bento in this enameled stainless steel bowl (from Daiso). I can pack a lot of food in here because it's pretty deep, and it has a translucent tupperware-type lid to keep everything secure. The advantage to packing a tight bento like this is that the food doesn't move around like it might in a larger box. Besides the chicken meat, this bento contains a mushroom-cut radish, steamed broccoli, a panda rice ball (with cucumber "bamboo"), carrots, grape tomatoes, and blood orange segments. Aren't those cute pencil chopsticks? I have a pair in 5 other colors. They don't really function as color pencils, by the way. ^__^

Just curious; I notice another bentomaker often photographs her bento on a pure white background, and it seems to make the food stand out. I tried the same, but I'm not convinced I like it better. Maybe I have too many shadows. What do you think?

Another Salmon Bento

Another Salmon Bento by sherimiya โ™ฅ
Another Salmon Bento, a photo by sherimiya ♥ on Flickr.
Wild Alaskan salmon for lunch bento today: I like to pack this omega-3 rich fish for the kiddos about once a week or so. Today I served it over homegrown lettuce so they can eat it like a wrap, topped with shaved manchego and halved baby tomatoes. There's also a little cup of steamed corn and a pretty little radish. Plums, grapes and a strawberry round out this healthy and simple bento.

May the 4th Lentil Sausage Bento

I know it's not May the 4th yet, but since it falls on Saturday this year, I'm sending MisterMan to school with his Star Wars bento today. I tried a new lentil potato sausage chard "salad", which can be served hot or cold. If you want to serve it cold, you can toss with balsamic vinegar or sherry vinegar. I cooked French lentils with diced purple potatoes, then added pan-fried chicken artichoke sausage, mushrooms, onion, garlic and celery. I tossed in shredded chard at the end just to wilt it a little. If you omit the sausage, it could be a vegetarian option. I thought it was pretty good, and refreshing on this hot day. The top tier holds a big strawberry, carrots, fancy-cut radish, broccoli, and pickled turnips and kumquats. Do you see the Star Wars reference? It's very simple, but I hope he gets it. Light sabers were cut from red sweet pepper and cucumber. Happy May the 4th (a few days early)!

P.S. You can see the other Star Wars bento I have made in the past here.

May Day Flower Lei Fried Rice Bento

May Day Fried Rice Bento by sherimiya โ™ฅ
May Day Fried Rice Bento, a photo by sherimiya ♥ on Flickr.
On May 1st we celebrate May Day in Hawaii. And May Day is Lei Day in Hawaii! So for TinySprite, I served her fried rice with a hard-boiled egg girl decorated with nori. She's wearing a lei of carrot, radish and cucumbers, and some fresh nasturtiums in her hair. The top tier contains strawberries, broccoli and cara cara oranges. Can you believe it's May already? I'm ready for the warm weather and brand new garden blooms!

"...May Day is Lei Day in Hawai`i
Garlands of flowers ev'rywhere,
All of the colors in the rainbow
Maidens with blossoms in their hair
Flowers that mean we should be happy,
Throwing aside a load of care,
Oh, May Day is Lei Day in Hawai`i
Lei Day is happy day out there."

Nyan Nyan Nyanko Kitty Egg Salad Bento

Guess what? I didn't feel like cooking for the bento today! So lucky TinySprite gets her favorite egg salad pita pocket sandwich. I tucked some shredded spinach into the whole wheat pocket before spooning in the egg salad mixture (this batch contains celery, onion, yogurt, curry powder and turmeric, salt and pepper). Then I decorated a radish slice with a nori kitty face. Ears and paws are also radish pieces. I snuggled some silicone cups of cantaloupe chunks, the absolute last strawberry, carrots and sesame slaw in this Chococat box as well. Happy weekend everyone!

Mouse Gets The Cheese Curry LunchBots Bento

I usually pack the kids' favorite keema curry (see the Just One Cookbook method and recipe I use here) in a thermal food jar, but lately my daughter hasn't been finishing her meals in that container. Is she getting bored of the presentation? Let's try packing lunch in a different container, with a fun radish mousie and "swiss cheese" as a dining companion! Doesn't that make the bento more appealing? The LunchBots Clicks are leakproof, making them ideal for soupy, saucy kinds of foods. The lids are translucent, so you can see what's coming up for lunch too -- a little touch I like a lot. The matching side box, a bit shallower, holds pickled cucumbers and red onions, along with a variety of berries. Just the right size for my kindergartner. P.S. She gobbled it all up. ^__^

Hinamatsuri Girls Day Bento

March 3rd is Girls' Day, which falls on Sunday this year, so I made this bento for my TinySprite to enjoy tomorrow. See some of my other Girls' Day bento here and here and here). Along with her favorite shoyu chicken and furikake rice, there's a broccoli tree, the current double obsessions of pickled cucumbers and red onions, and some carrot sticks in the big stainless steel-lined cutie pie box. The smaller, divided box holds her hard boiled egg Hello Kitty girl (decorated with radish ears, nori eyes, carrot nose and soba whiskers), strawberry kimono, radish "fan", tomatoes and carrots. Next to her are a pile of blackberries and blueberries. It's a celebration of cute girlishness and I think she'll love it. Happy Girls' Day to all the girls out there! ^__^

Summer Rolls Bento, part 3.

We just came off a long 3-day weekend due to a teachers work day, and it's a little tough to get back into bentomaking and blogging again. And did I mention the whole weekend was the most gorgeous, summery, sparkling weekend we've had all year?! That's right; we hit our year's high temperature yesterday. The bay area is notorious for cool summers and late warming, so this is pretty typical. While everyone else is planning pumpkin soups and pot roasts, we're thinking refreshing salads and ice teas. So here's today's no-cook bento: the ever-popular summer rolls in rice paper wraps, filled with lettuce, pickled carrots and cucumbers, deli nitrate-free ham and salami. Yeah, I know it sounds weird. But the kiddos cannot get enough. Plus, the rice wraps stay closed so well (compared to tortillas) that they're hard to beat mess-free fun finger foods. How can you argue with that? Two little Okinawan sweet potato lovebirds perch upon a broccoli branch above a radish heart. Awwwwww. Summery peaches and berries complete the meal. I wonder if they'll go for summer rolls all week?

Furikake Mahimahi in Panda Bento

Furikake Mahimahi Bento by sherimiya โ™ฅ
Furikake Mahimahi Bento, a photo by sherimiya ♥ on Flickr.
We try to eat fish at least once a week, but it seems I've been slacking off here, since (scrolling down) I don't see any fish in my photostream lately. When I saw this nice mahimahi at the market I thought it would be a nice change from the usual salmon (although I love salmon). I cut the fillet into smallish pieces, then pan-fried in butter (olive oil is good too). At the end, I sprinkled some furikake on all sides. I've also made this using kewpie mayo, smearing the fish with it and then sprinkling the furikake and frying. This works, but the furikake might burn if you fry too long. For TinySprite's bento, I tossed a few pieces atop hapa rice, stuck a few carrots on the sides and topped with fish-shaped Okinawan sweet potato. A couple of fish skewers completes the theme. The top tier holds berries, radish and cucumber. Just sprite-sized. ^_^

Soy Chicken Drumsticks Bento

Shoyu chicken was my absolute favorite dish as a child. I always requested it if my mom ever asked. This version is one I've posted before, and it's a Vietnamese style using fish sauce and coconut water. It has a different, less sweet flavor that I really crave, and when you make it in the slow-cooker you can enjoy the aroma for hours while you dash in and out of the house between kid chauffeuring duties. We are now cutting out soy due to allergies, so I had to adapt the recipe further (substituting with coconut aminos), but as MisterMan says, "It still tastes almost the same, like you know what it's supposed to be." Well, good! I guess. Kids (my kids, anyway) really like shoyu chicken, and I served this one over rice in the bento (out of view), and all the rice got devoured. Something about chicken & rice. The rest of the round box contains: Okinawan sweet potato flower shapes, steamed broccoli, carrots, pluots and golden watermelon. I didn't mean to buy a golden one, but it wasn't labeled as such. There's something weird about a yellow watermelon, though it tasted just like the red kind. I topped with a radish cut like an apple, with sesame seed detail. Simple!

My Dreamy Bento

My Dreamy Bento by sherimiya โ™ฅ
My Dreamy Bento, a photo by sherimiya ♥ on Flickr.
We're Baaa-aaack (to-school)! Almost. It's been quite awhile since I've posted here. The truth is, we are finished with summer vacation. As of yesterday. So over the last week we were determined to milk every last drop of freedom with carefree youthful abandon. Remember doing that when you were a kid? Summers seemed to last for ever and ever back then! I still love summers; in fact, I just might love them even more than my kids. MisterMan is still at the age when he looks forward to going back to school and seeing his friends; and TinySprite is starting kindergarten this year (brand-new school and brand-new friends). They both couldn't be more excited about all this. As for me, I need a little transition time to get back into the bentomaking groove, and the homework, and tests, and all that stuff. SIGH.
Here's a beautiful bento I made for myself to pick up my mood. I used my gorgeous and insanely cute Oyako Kuro goldfish box to pack one of my favorite comfort foods. If I were going back to school, this is what I'd want to eat on the first day (omega-3s to kickstart brain function and all): butteryaki salmon, little wedges of kabocha steamed and then pan-fried in the same sauce, alongside garlic spinach hapa rice. A little star radish (pickled would be even better). And an adorable sweets box of cottage cheese, sunflower seeds and sweet ripe strawberries. Yeah. A bento like this would almost get me looking forward to school! Almost. ^_^

Salmon and Lil' Mouse Bento

Salmon and Mouse Bento by sherimiya โ™ฅ
Salmon and Mouse Bento, a photo by sherimiya ♥ on Flickr.
This week's salmon and rice format is packed in a newish two-tier strawberry shapes bento set from Daiso; so cute right? And only $1.50; you can't beat that. The only problem is that it's just a tad bit big, so I think the salmon layer probably moved around a bit by lunchtime. TinySprite gets red rice and salmon with furikake kabocha, a little cup of steamed corn off the cob, and a cute radish mouse. The lower tier contains white peach slices, cherries, blueberries and homegrown sunsugar and yellow pear tomatoes. Simple but satisfying.
