Corned Beef Reuben Bento


Sure we're hunkering down but that doesn't mean we can't still enjoy our Lunchbots Duo bento. And when there are leftovers in the fridge that just call out for a sandwich, how can we say no? So happy I was able to stock up on one last bag of blood oranges too. These are so pretty in bento!

Pizza in the PlanetBox Bento


Like I mentioned in the last post, we've started the new school year with a brand new bento box system: The PlanetBox Rover. I was very excited to test it out! So far we've used it only a couple times, but I can't wait to show and tell you about it already. Our first packed PlanetBox is shown here:



We packed homemade pepperoni/spinach/onion/red pepper pizza in the largest, square section. I separated the two pieces with wax paper. Since the lid is convex, you can pack more than you think, a feature I love! In another section I packed a cabbage/carrot/daikon slaw and grape tomatoes, a selection of strawberries and super-red elephant heart plums (my current season favorite), cinnamon cottage cheese in the little dipper, corn sheets, and some sunflower seeds in the tiniest center compartment. That little space is supposed to be reserved for a small indulgent treat, like maybe a piece of candy or something. 

I'm not sure how much each section holds, but the website says this entire box has a capacity of 4.5 cups -- I'm assuming that means packed to the gills up to the top of the recessed lids. The box itself is not leakproof, so they don't recommend liquids like gravies or sauces, but the lidded containers (I've only shown the small one) are reported to be leakproof.

My experience with the PlanetBox Rover?

The little round dipper was indeed leakproof, and my son said everything stayed inside its separate section without problem. He had no problem opening and closing the box, and he ate everything we packed. As a bonus, his fork fit into the long section after he was finished, so as to keep the inside of the carrying case clean. I did see some liquid spilled into the case, however, but I think it was the pickling liquid from the slaw. If I were to pack slaw again, I would make sure to drain it first, or else pack it in one of the dippers. Otherwise, it is a great option for bento packing, and I recommend it. Cleanup is easy; I washed everything in soapy water (they are also dishwasher safe) and towel-dried. The only reservation I have is the somewhat higher than average retail price of $49.95 for this box set; there is a smaller one that sells for less (Shuttle, $34.95) and a larger one that sells for more (Launch, $55.95), but I expect this box to last for many uses, making it a quality long-term (hopefully lifetime) investment. We're looking forward to using this box much more throughout the school year!

Tortilla Spiders Halloween LunchBots Bento

Today's bento is one you've seen several times before, because it's a fun way to present fish: deconstructed fish tacos. The cod is pan fried in lemon pepper and served with a cabbage slaw tossed with red onion, tomato, and orange. Instead of the usual tortillas I cut little bunny shapes and layered them to make cute spiders. Yes, I know they look as though they only have 4 legs each. That's because you didn't notice the other 4 legs located precisely behind the 4 which are visible. Trust me, they're there. The last compartment holds a handful of grapes and some sliced strawberries. The LunchBot Trio is ideal for this lunch because there aren't any saucy or gravy parts to worry about. I love it!

Salmon LunchBots Brainfood Bento

Second bento of the school year, and I fell back on another easy one. Salmon! I like to prepare salmon about once a week because I think it's good "brain food" for the kids, packed with healthy omega-3s and all. I usually pan fy the fish in butter or olive oil, and just after I turn off the heat, drizzle shoyu around the pan. I served TinySprite's helping over roasted garlic potatoes and kale chips (I didn't pack the kale chips because they get soggy overnight. If your kids don't mind, you can pack them in the bento too. They're very tasty!). She also gets a cabbage carrot daikon slaw with vinegar dressing and topped with halved cherry tomatoes. Her fruit treat includes green and purple grapes, and super sweet cantaloupe. This time we used the LunchBots Trio. I made this one myself, since the kids were at an afternoon activity until late, but it only took me a few minutes to do. Thank goodness it's a short week. I'm already ready for the weekend; how about you?

The Mid-Summer Bento: Tebasaki in EcoLunchBox!

Helloooooo out there! Is anybody still out there? Or are you all on the beach, kicking back and letting the kids live out their summertime dreams? If you're like us, you've been milking every minute from this long-awaited summer. We took off the very day after the kindergarten graduation ceremony back in May. Literally. Of course, after all the fun at Legoland, Disney, museums, beach, camping, county fairs, concerts, and poolside, the kids still have to eat. But guess what? MisterMan has been picking up the ball and making bento for himself and his sister throughout their summer programs. Score! Me -- since I've been on bento hiatus I haven't even booted up the laptop much less brought out the camera setup to take any photos. But I have been taking phone pics of his creations, and I really want to show you a sample of his handiwork. You know, later.
So yes, I've been enjoying my summer too, bento-wise. However, I did manage to make their bento today, just because I kind of missed it. This simple bento contains tebasaki (crispy chicken drumettes and wings, see the method and recipe I use here); vinegary two-color cabbage slaw; fresh corn-off-the-cob; pickled cukes, carrots, daikon and red onion; cherries; and cantaloupe. All packed up in the very practical and stylish Ecolunchbox Three-in-One. I think I did okay! This is my token mid-summer bento contribution, to keep my chops fresh. Portobello Ecolunchbox Bento

Welcome back from a long Memorial Day weekend! Since we did a lot of grilling over the weekend, I decided to have a meatless Tuesday bento today. I broiled portobello mushrooms with olive oil and balsamic vinegar, then garnished with green onion, cilantro, and various other herbs from the garden. I personally had mine with chimichurri, with which I am currently obsessed. It's a very intense and aromatic dressing/sauce, and I use garlic and sherry vinegar to give it even more bite. I like it with meat, pork, even just with bread or pasta, like pesto. MisterMan has sliced portobellos with savoy cabbage - carrot - daikon - sesame slaw, watermelon, corn, peapods, tomatoes, Okinawan sweet potato, blueberries and apricot. All packed in the 3-in-1 Ecolunchbox set. Super refreshing to kick off this brand-new SHORT week. The last week of school for us!

Chicken and Broccoli with Beet Slaw Bento

I haven't posted a MisterMan bento for awhile, so here's today's: Vietnamese soy chicken with steamed broccoli, a raw beet-carrot-onion-daikon vinegary slaw, and a selection of fruit (peach, strawberries, blueberries). It does look a bit ordinary, doesn't it? Actually, I haven't been posting his bento because he's been making his own, by himself, a couple of times a week. He decides what and how much he wants, and he likes to show me the finished result. I've taken phone shots of his creations, and I really should post them for posterity. Maybe I'll show you a few of his bento sometime!

Salmon, Tomato Relish, and Slaw Bento

Today I made TinySprite a compartmentalized bento, so I could give her a little bit of several different things. I find that she's more likely to finish everything if there isn't too much of it. She gets a piece of king salmon, pan-fried in olive oil, pepper, and parsley, served beside a red cabbage/savoy cabbage/carrot/onion slaw. Since she loves pasta, I also gave her some tricolor rotini topped with cherry tomato/shallot/garlic "relish" and shaved parmesan. I squeezed some cherries, blueberries and a halved strawberry in the rest of the sections, along with a couple of pickled cucumbers. The four dividers keep everything separate, and since there's no sauce in this bento either, there shouldn't be any crossover leakage. Hope she enjoys this one!

Lil' Sandwich Rollups EcoLunchBox Bento

Even though my kids usually eat the "dinner leftovers" type of bento quite often, they are just like all other kids and love the bitesize sandwich rollups too (maybe even more). My kindergartner always prefers to eat with her fingers so a bento like this is a hit with her. Since there isn't anything saucy to drip out, a bento like this is ideal for the EcoLunchBox Solo Cube. I secure it with an elastic band and it's good to go. Besides the whole wheat spinach brie and turkey rollups (I flattened the bread with a rolling pin first), I packed a cabbage onion tomato slaw, a cup of juicy cantaloupe, a strawberry, and some blueberries. This will just about satisfy her appetite, I think!

Fish Sticks Lunchbots Bento

Remember those perfectly rectangular fish sticks from elementary school? Do they still serve those? I've never made them at home, but I saw this oven-baked version of fish sticks and decided to try. I used cod which I cut into strips, coated with egg and seasoned panko, sprayed with oil and baked in a 425F oven until golden. I also baked some diced purple potatoes under the rack of fish at the same time, and we also had kale chips (which we ate for dinner; no leftovers). I packed the LunchBot Quad with vinegary cabbage carrot onion daikon slaw on the side, and a selection of springtime fruit: cherry tomatoes, cherries, apricot and strawberry.

I Love Watermelon (Radish)! Bento

You can't see the burger in the photo, but I tried a new meatless recipe. It consists of about a cup of roasted sweet potato, a cup of brown rice / barley, and a cup or two of black beans, processed along with sauteed onions, garlic, cumin, and Worchestershire sauce to taste. The patties stuck together pretty well, which often is not the case (in my experience) with bean burgers. I melted cheese and served with tomato slices next to a side of cabbage / onion / carrot slaw tossed with vinegar, shoyu and a bit of superfine sugar. The last section of the LunchBots Trio contains the miniature spring selection of fruit at my farmers market: strawberries, apricot and nectarine. We have watermelon too, but the cheddar bear is actually enjoying a slice of watermelon radish. Those are good too, even if they're not quite as sweet!

Children's Day (こどもの日 Kodomo no Hi) Fish Slaw Bento

Happy Children's Day! Okay, it's not until the 5th of May, but since that falls on a Sunday, we'll be celebrating it today. I made kind of a deconstructed fish taco (but without the tortilla), which kind of falls in with Cinco de Mayo too. Yay! I pan-fried snapper and served it with a fresh cold cabbage slaw which was tossed with shredded carrots, onions, cucumbers, and rice vinegar with a sprinkling of sugar. I also made a tomato cara cara orange salsa. A cup of mango completes the tropical feel. Along the pickled red onion there are some cucumber koi nobori (carp) to go with the cheese nori boy with his Okinawan sweet potato hat. A couple of big strawberries fill out the box. I know it's "Children's Day", but when I was a kid we called it Boy's Day (and there's a Girls' Day to balance in March), and so this one is for my MisterMan. Hope he likes it!

Nyan Nyan Nyanko Kitty Egg Salad Bento

Guess what? I didn't feel like cooking for the bento today! So lucky TinySprite gets her favorite egg salad pita pocket sandwich. I tucked some shredded spinach into the whole wheat pocket before spooning in the egg salad mixture (this batch contains celery, onion, yogurt, curry powder and turmeric, salt and pepper). Then I decorated a radish slice with a nori kitty face. Ears and paws are also radish pieces. I snuggled some silicone cups of cantaloupe chunks, the absolute last strawberry, carrots and sesame slaw in this Chococat box as well. Happy weekend everyone!

Rilakkuma Chicken Miniburgers LunchBots Bento

Today I made mini chicken burgers for TinySprite. MisterMan is in the mountains somewhere, eating cowboy stew and soudough bread or something like that. With only one bento to make, I decided to take some extra time and make a cute one. I fashioned a bear face with ears, and added nori details to a piece of mushroom to make Rilakkuma; his sidekick Kiiroitori is cut from a yellow sweet pepper. There's also a panda egg on a bed of furikake rice, some Japanese slaw (shredded napa cabbage tossed with rice vinegar, sugar, shoyu and sesame seeds) -- the kids both LOVE this salad! -- and more supersweet organic strawberries and carrots. All packed in the sky blue LunchBots Quad. Happy Wednesday!

Easter Bunny Pals Deconstructed Fish Tacos LunchBot Bento

Today's bento is deconstructed fish tacos in the LunchBots Trio. I've packed fish tacos like this before (here and here and here and here), because there's no good way to pack fish and salsa inside a tortilla without everything getting soggy and falling apart. In fact, I'd rather just omit the tortilla altogether, but the kids love their bready carbs, so I added two bunny shaped tortilla pieces in this one to appease them (and make it count as an Easter bento as well. Score!). I put the fried snapper on a bed of spinach in one compartment, with the cabbage tomato onion orange pepper slaw next to it. The last section holds strawberries, sliced steamed Okinawan sweet potato, and carrots. In case you didn't notice the Easterness right away, the little chickies should give it away. Fishy Bento

I haven't used this box in a very long time; not since last school year, I think. It seems a tad big, but you don't have to fill up the sections completely to the top. The lid on this box is not tight sealing anyway, so it must remain upright (or use a belt). I decided to use it because I wanted to give him some snapper we made for fish tacos along with some cabbage cilantro slaw in the next section. The slaw is good with citrus, so I put his mini mandarin in that section alongside. I was also able to fit in a partial corncob, some grape tomatoes and a pink carrot - Japanese sweet potato skewer in another section, and a fruit selection in the last: green plum, peach and grapes. To finish out the fish theme, I cut a fish shape from sweet potato and decorated it with nori detail. It sits on top of the inner boxes just under the convex part of the lid. Done!

Fish Tacos, Deconstructed Bento

Today's bento has snapper fried in pepper and lime juice, next to cabbage slaw tossed with red onion, oranges, cilantro, and cumin. At home we made fish tacos with tortillas and I added sour cream and hot sauce, but omitted that from the bento. We have a lot of fruit in the house right now, so I put some oranges, strawberries, red grapes and kiwi in there. I added some purple carrot discs for color and a purple / regular potato "mushroom" in the center for fun. That's it! Quick and easy.
