Toast Of The Day: Avocado Egg Salad Edamame



Super sunny day here in self quarantine, so a made a sunny toast to reflect my mood: avocado, egg salad, edamame, radish sprouts, cracked black pepper on whole wheat bread. It was good but I will need to make more pickled slaw for next time.

Egg Salad Sandwich Snack Bento


While I was going through my extensive bento stash recently, I found a ton of super cute bento boxes that my kids probably think they're too grown-up to use now. That's not what I think. Even though these boxes hold only 350 and 250 ml, I can still fill them with snack bento. And I know they are always excited (hungry) for snack bento between school and afterschool activities!

In TinySprite's big snack box: egg salad on whole wheat bread with pickled cukes and a little romaine for crunch.

In small snack box: grape tomatoes, edamame and mandarins.

St. Patrick's Day Pot o' Gold Bento!



Happy St. Paddy's Day!  Today TinySprite gets a rainbow's end pot o' gold made from a piece of green pepper filled with egg salad and cheddar cheese coins. There are stars cut from steamed Okinawan sweet potato, red grapes, tomatoes, and mandarin cuties. Hope it's a lucky day for you!

Jack-o-Pepper Egg Salad Halloween Bento

For TinySprite I made egg salad, but instead of a pocket sandwich (which I usually do with this type of filling so that it doesn't fall all over the place) I packed it inside a carved orange bell pepper. I found a pepper that looked pretty pumpkin-like, but was so much easier to carve than a real pumpkin! (Although this is a regulation sized bell pepper, you might like to view my tutorial on carving a mini bell pepper here) I lined it with a spinach leaf to keep the filling from oozing out of the eyes and mouth. I didn't send along the top (although it might have been handy for ensuring safe travels). Along with the jack-o-pepper egg salad, I sent a cup of pickled veggies, some grape tomatoes, strawberries and cantaloupe. Happy Halloween week!

Nyan Nyan Nyanko Kitty Egg Salad Bento

Guess what? I didn't feel like cooking for the bento today! So lucky TinySprite gets her favorite egg salad pita pocket sandwich. I tucked some shredded spinach into the whole wheat pocket before spooning in the egg salad mixture (this batch contains celery, onion, yogurt, curry powder and turmeric, salt and pepper). Then I decorated a radish slice with a nori kitty face. Ears and paws are also radish pieces. I snuggled some silicone cups of cantaloupe chunks, the absolute last strawberry, carrots and sesame slaw in this Chococat box as well. Happy weekend everyone!

Egg Salad Pita with Cheddar Jack Bento

Okay, I only have about a week left for Halloween bento so I better get moving. Today I made a quick no-cook bento for MisterMan using a sandwich round pita. Have you seen these? They are pocket sandwich rounds which are perforated along their diameter so that you can tear them neatly in half to have two pita pockets. How convenient! I lined this one with lettuce and filled with a few scoops of egg salad. A slab of cheddar carved with a small paring knife into a jack-o-lantern face adds the Halloween charm. Note: if you use a slice of processed cheese, you could do the carving MUCH more easily. But we don't eat prepackaged cheese slices around here. Only the real, extra sharp deal! So he's a little messy, and cracked on the edge, but that just adds to his character. There is a cup of corn off the cob, another of homemade pickled cabbage, a sprig of steamed broccoli, a couple of strawberries (it's not strawberry season anymore, and I really need to stop buying these), and a bunch of lil' grapes.

Chick and Egg Salad Bento

I had to make egg salad since my 9-year-old informed me that he'd never had it before. What? Whoops. I remember eating egg salad sandwiches when I was about his age, with all kinds of weird stuff like sweet pickle relish inside. Or maybe those were my sardine sandwiches? My childhood friend Barb showed me how to make a sardine sandwich with relish and tabasco; I still think that sounds really good, don't you? In fact, it may be time to introduce the kiddos to a sardine sandwich! I'll try that on 'em next week, maybe. For this batch, I mixed a few hard-boiled eggs (diced up with the handy-dandy egg slicer) with plain yogurt, sweet pickle relish, mustard, onions, salt/pepper and topped with diced ham. I put it on a lettuce salad but I'd like to serve it in a pita next time (at least for MisterMan). For fun, I nestled a baby quail egg chick on top. The upper tier of her favorite panda bowl contains sliced peaches, blueberries, grapes and strawberries. For the record: they both loved it. Yay!
