Domo Meatloaf Bento


I forgot where I found this meatloaf recipe but it calls for a whole container of silken tofu to be mixed with 1 pound of ground turkey and 1 pound of ground beef (or pork). You wouldn't notice the tofu except that this meatloaf comes out very moist and with a lighter texture; not as dense as a regular meatloaf. It's pretty good, and I'm thinking healthier too! 


And of course, rectangular brown food must be transformed into Domokun. I think it's a bento rule.

Mac and Cheese Bento


I put roasted grape tomatoes on top of today's (whole wheat) mac and cheese to add a little color and also to check out these super cute new leaf picks from Modes4u. I think they are meant to be radish, tomato, and some kind of sprout leaf tops. So creative and fun!


Also in our Lunchbots Trio: little pita triangles topped with protein-rich nutrition, kiwi and the ever-present (as long as they're in season which I hope is at least another month) blood oranges.

Soba Bento


Meatless Thursday over here in our original Lunchbots Duo. The weather has continued in early spring mode, and this bento reflects our sunny mood. I love all the colorful fruit and produce we're seeing in the market lately. All these blood orange wheels are from the same piece of fruit. This variety of citrus is just amazing in its gradations of hue. Have you tried it yet? So pretty for bento!

Furikake Salmon Lunchbots Bento


Two in a row! I'm on a roll now.

I recently learned that to ensure a crispy salmon skin you need to remove all the moisture from the fish first. I patted the filet with paper towels and let it air dry for a while before pan frying. Came out good! I love salmon and cook it once a week. I eat mine very simply with a bowl of ๐Ÿš or on a salad๐Ÿฅ—. So ono๐Ÿ˜‹

๐Ÿ€Happy St. Paddy's Day Bento! ๐Ÿ€


Green green green!


Happy St. Patrick's Day, you guys! ☘☘☘ It's that green time of year; luckily there are lots of green foods to choose from. Too bad the protein has to deviate from the color scheme but maybe it's better that not EVERYthing is green...
Inside this cute green frog bento: stirfried chicken, baby bok choy and peas, tomato, strawberries, kiwi.


I made shamrock egg rings with green bell peppers (I looked for 4-lobed ones and sliced them about a half inch thick). You can fry the egg directly in the pepper ring and then put a lid on the pan to finish steam cooking. The rest of this Sistema bento contains: pesto spinach pasta, turkey bacon green bean rollups, a cucumber pot of pickled wakame (plus the cucumber balls), blueberries, strawberries and kiwi.

Happy Girls' Day Pucca Bento

March 3 is Hinamatsuri, or Girls' Day in Japan. It's one of my favorite special holidays to commemorate in bento. I've made many, many, many Girls' Day bento in the past few years. This year Pucca stars in her own bento for the occasion, wearing bell pepper kimono and holding a radish fan. She appeared in a Santa suit for a Christmas bento a few years ago; she's so festive, that girl!

I missed making bento these past few months. MisterMan has been packing bento for himself and his sister so I have been taking a break from posting too. I want to keep up my bento chops though, so I will make sure to not be so remiss in the future.

Wishing our girls - and all our children - a healthy and happy year ahead. May their future be as bright as their smiles๐Ÿ˜Š๐Ÿ‘ซ๐Ÿป

Totoro Calzone Bento


Aw, it's Totoro! You may have to use your imagination, though. I made pizzas for dinner, and always try to make some kind of cute calzone at the same time. You can see my past attempts if you do a search in the blog search bar. I know, I made his chevrons wrong. Shoots! He has a spinach leaf umbrella, and a tomato balloon. I hope he's happy! St. Paddy's Day Green(ish) Bento!


Happy St. Patrick's Day, everyone! In honor of this holiday, I've made a "green" Lunchbots Quad bento for TinySprite: okay, maybe half green. The right half. The green part: kiwi, pasta with pesto, and green pepper "shamrock." I also nearly every green pick I own, which turns out to be quite a few. Yay! The other half: tomato, mandarin, and sausage/mushroom. Fork/spoon/knife combo utensil by Light My Fire.

Herby Chicken Lunchbot Cinco Bento


This is my first time using the large Cinco box from Lunchbots, and I was very excited to see what my middle-schooler thought of it! We are heavy users of the company's other boxes (Duo, Trio and Quad, as well as the Clicks series) and I heartily endorse the quality of those containers. I've been packing home lunch in these boxes their whole school lives, and they are all still in use after 6-7 years, none the worse for wear. I thought this larger size would be just right for my boy, who has a pretty big appetite. I took the opportunity to pack a whole chicken thigh and a serving of spinach pasta with potatoes and asparagus in the two biggest sections. That left me still with three more, smaller, sections which I filled with pickled carrots and daikon, sliced kiwi, and grapes, strawberry and tomato. He loved  it; had no problem finishing all the food. While the box is a bit larger in size than our other Lunchbots, it still fit nicely inside his insulated tote bag. I have a feeling this new box will be getting a lot of use in the coming years. Thumbs up!

Hinamatsuri Girls' Day Bento!


For TinySprite this Girls' Day, I made her two mini ham sandwiches with lettuce and cheese. These rolls (King's Hawaiian sweet bread - so good) fit perfectly inside this two tier box that I think I got from Daiso many years ago. It even matches this fork with the same bunny design on the lid. Alongside the ham and cheese dolls with nori and pepper details, I have a purple sakura (Okinawan sweet potato), carrot flowers, blood oranges, kiwi, and a fan-cut radish. Happy Girls' Day to all the little (and big) girls out there!

Bunny Eats a Rainbow Bento!


This one is just a fun snack I threw together for the kiddos to take advantage of all the colorful fruit and veggies slowly starting to appear in the markets these days. I can't wait until we are in full spring fruit season! This one, packed in the "Zen" box from Bento & Co, contains a rainbow of goodies: strawberry, satsuma mandarins, tamagoyaki (okay, not a fruit or veggie, but the egg contributed such a bright sunny effect here), kiwi, blueberries, and Okinawan sweet potato. I added a cheese bunny holding a mini fresh garden carrot too. Don't fear, spring will be here before you know it!

Mama Bird Loves Her Baby Chicks Valentines Day Bento!


I didn't think I would be able to get around to a Valentines Day bento this year, but I just made it! I know I should have put more hearts in it, but you get the picture. I think I made a similar bento last year too, to show my babies how much I love them. That's me, with my MisterMan and TinySprite! That's what bentomaking is all about! 

I used a hen's egg for the mama bird, and two quail eggs for the babies. To get the eggshell effect, use a small paring knife to make zigzag cuts all the way around the hard-boiled egg (not too deep, or you'll scratch the yolk). Then, gently pull the top white part off. These eggs are sitting on a nest of soba noodles, with two grape tomato hearts. The upper tier holds a colorful variety of other stuff: Okinawan sweet potato, kiwi, blueberries, blood orange, carrots and a strawberry. I put a container of tsuyu sauce (not shown) too. Hope you guys all have a fantastic Valentines Day with your loved ones! Muah!

I Heart Chili Riceball Bento


Another cold day calls for homemade chili (I used this recipe but with lots of extra veggies thrown in, because you know me) in the 17oz. Stanley thermal food jar; this larger size is great for kids whose appetite is bigger than the usual 12oz. jar can hold (like my MisterMan). I also like this jar because it's virtually indestructible; very heavy-duty and all stainless steel. To pack alongside, I used two EcoLunchBox Eco Dippers: one holds a heart-shaped shiso musubi with a nori face in a lettuce cup and a grape tomato. The other holds sliced kiwi, blood oranges, and fresh (yes, fresh!) pineapple chunks. He'll take the very practical combo spoon/fork/knife with him too. Happy Wednesday, friends!

Curry with Rice Puppy Bento


It's been cool here in the Bay Area, and it's time for some warm thermal bento. I made curry loaded with vegetables, which will be ideal to nourish the kiddos midway through their hectic day. TinySprite still uses this Hello Kitty Thermal Food Jar, and if I add a side box with a selection of fruit - here, grape tomatoes, kiwi, and a tiny satsuma mandarin - it's just the right amount of food for her.

I would put the rice puppy inside the thermos, but I'm sure he would fall apart and disappear before lunchtime, so I packed him separately for her to add at her discretion. I hope she likes this one. Woof!

Lemony Chicken and Orzo Soup Bento

I got this chicken soup recipe from Bon Appetit magazine and it went over pretty well. I substituted chicken breast meat since that was what I had, and the meat was tender. It made a pretty big pot of soup, and the family completely slurped it all up. Good thing I reserved some for the Hello Kitty thermal. The little side box holds: blackberries, strawberries, Okinawan sweet potatoes, and the usual pickled stuff. This time I added sliced kiwi in with the bittermelon, and the sweet fruit actually helps cut the intense bite of the bittermelon, if you eat both together. Unfortunately, the kiwi gets soft and falls apart in the solution, so you have to add it upon serving. I think it looks pretty. If you don't think you'd like bittermelon, I suggest you try it this way. It's not bad!

Lemony Chicken and Orzo Soup (from Bon Appetit)

1 T olive oil
1 medium leek, white and pale green parts only, halved lengthwise, sliced crosswise 1/2" thick
1 celery stalk, sliced crosswise 1/2" thick
12oz. skinless, boneless chicken thighs
6 cups low-sodium chicken broth
Kosher salt, fresh ground pepper
1/2 cup orzo (I used whole wheat orzo)
1/4 cup chopped dill (I omitted)
Lemon halves (for serving)

Heat oil in a large heavy pot over medium heat. Add leek and celery and cook, stirring often, until vegetables are soft, 5-8 minutes. Add chicken and broth; season with salt and pepper. Bring to a boil, cover, reduce heat, and simmer until chicken is cooked through, 15-20 minutes. Transfer chicken to a plate. Let cool, then shred chicken into bite-size pieces. Meanwhile, return broth to a boil. Add orzo and cook until al dente, 8-10 minutes. Remove pot from heat. Stir in chicken and dill. Serve with lemon halves for squeezing over.

Mac and Ka-broc-cheese-rizo Bento

My kids have been requesting mac and cheese, so I decided to make a giant batch to last them a couple days. They can seriously put away this stuff. As usual, I packed the portions in their thermal food jars; this one is TinySprite's Hello Kitty Thermos brand jar, which holds 10 ounces and has served us well throughout most of her preschool lunch career. I know it doesn't keep the food as hot as long as MisterMan's Stanley food jar, because I've done a nonscientific, side-by-side comparison using hot water and a thermometer. It doesn't really matter for her since she eats within 3 hours or so after I've packed it, but my bigger concern now is that she may be outgrowing this little jar. The last few times I used it, it's come home completely empty -- which is good, of course -- but it just makes me wonder if I could pack a little bit more for her whether she'd eat more.

I've used several different recipes for mac and cheese (like Pioneer Woman's version here and Bacon Mac and Cheese here). Today's mac batch contains three extra ingredients. Can you guess what they might be? Soyrizo, diced kabocha and broccoli! It's not exactly a secret; I've done it before, and anyway I told them I'd put it in, and their reactions were mixed. TS: Yayyy! MM: Did you cut the kabocha super small and mix it in really well? Mmmkay. Can you tell my boy might not appreciate the finer aspects of this wonderful squash as much as my girl? I assured him I did. The other key is to use a lot of cheese. I mean a LOT. Like a whole pound or more. They love the gooey stuff, and I don't think they even noticed that it was whole wheat elbow macaroni. So there. The other container held all fruit, since I was pretty happy with the vegetable load they got in the mac: strawberries, kiwi, cara cara oranges, blueberries, blackberries, and grapes. And, there's a heart. Because it's the month of love. ^_^

Mac and Ka-Brocco-Cheese-Rizo Method/Recipe (I know, not a great name. But can you think of something catchier?)

Cook 8oz (or more if you like) whole wheat elbow macaroni, 10-12 minutes or until just al dente. Drain.
Steam or microwave 5 slices kabocha (or more) and one head of broccoli until softened.
Chop into small dice.
Whisk: 1C milk, 2T whole wheat flour, 1tsp dry mustard, and a sprinkle of cayenne pepper.
Cook over medium heat, stirring constantly, 6-8 minutes.
Add the diced kabocha and broccoli.
Add a half link (or more, if you like) soyrizo. Stir it all in well.
Add: 1C (or 2C, or more) shredded cheddar, parmesan, or whatever cheese you happen to like. Stir.
Add more cheese if you like it cheesier.
Add pasta, stir to completely incorporate.

Panda-monium Ma Bo Tofu Bento

We're having a meat week, following up the sausage pasta with ma bo tofu (I adapted Lovelylanvin's recipe), complete with a pair of tofu panda friends. I adapted the traditional recipe quite a bit; in fact it may not resemble actual ma po tofu much anymore. I have to omit all the chili bean sauce because the kids won't tolerate the spice, and I always add greens. Today I chopped half a bag full of baby bok choy, several green onion stalks and cilantro and mixed them in for texture, color and nutrition. Sometimes I use pickled mustard greens as well. Also, there is less sauce in mine, to keep it more bento-friendly. If you wanted to keep the soupiness, it would be better to pack it into a thermal food jar. But for us today, this donburi bowl-type bento box works just fine! Top tier contains all fruit: strawberries, grapes, kiwi, blood orange and little mandarinquat. If you've never seen a mandarinquat before, here's a photo, beside some yuzuquats and a standard satsuma mandarin for size comparison. The hybrid quats taste like kumquats, but slightly different. I think kumquats are the tartest, but it could be just me ^_^

Calzone Flowers Lunchbot Bento

Welcome to the first day of the Lunar New Year! The kids happened to have yesterday off, so we spent the long weekend celebrating with family. And today's bento has meat! It's a meaty calzone I made with whole wheat dough, containing pepperoni, ham, mushrooms, arugula, tomatoes and mozzarella. I had to slice it so that it would fit in the bento box, and decorated with Okinawan sweet potato flowers with peapod leaves. I rounded out the meal with a giant strawberry, some sliced kiwi, grape tomatoes, grapes, carrots, and sweet yellow pepper rings. You can see that after the dragon tour de force, I am now back to my usual "plain" quickie bento arrangements, which take much less time but which can still look fresh and appetizing due to the addition of colorful, seasonal fruit and veggies. I am a big proponent of local, seasonal ingredients for bento; the fresher it is, the less preparation (and even cooking) you have to do. And who doesn't love that?

Singapore Rice Stick Ladybug Bento

We just got back from a long weekend in L.A. visiting the in-laws, so there was no cooking done today >.< Still have yet to hit the grocery; maybe tomorrow. We had a lot of fun, but were all so exhausted. TinySprite had the longest nap in recent history this afternoon -- 3 hours. She had kung fu class this afternoon so she still was tired enough to go to bed at a decent hour. Yay! Luckily we have store-bought Singapore rice sticks, which is a semi-spicy curry type of noodle dish, mixed with egg, meat, bean sprouts and mushrooms. It used to be too spicy for MisterMan, but lately he's been getting a bit more adventurous and we're trying to "break in" his tastebuds so we can all eat more spicy foods as a family. I put a couple of grape tomato ladybugs atop the noodles, with nori decorations. I made a similar ladybug bento (here) not too long ago. Well, they are a sign of spring, aren't they? And so cute! I layered some cara cara oranges and kiwi on the other side, with grapes underneath. Hope you all had a great holiday weekend too. Welcome back to the routine ^_^
