Cheesy Cauliflower "Mac" and Cheese Bento
I made up this meal. TinySprite has been asking for mac and cheese for a long time, so I figured it was time to make a batch. I noticed a recipe for cauliflower "mac" and cheese (in which the cauliflower replaces the pasta), and combined it with another recipe I saw which incorporated butternut squash puree into the cheese mixture. I also added onion and minced broccoli, as I have been known to do, and came up with this. I've noticed cauliflower used as a gluten substitute before, and I even used it to make a gluten-free pizza dough (here), so I guess it's probably nothing new. But it's kind of a nice change from macaroni elbow pasta. I packed it into the Hello Kitty thermal food jar, and decorated the top with a red bell pepper "flower". The side box holds pickled cucumbers, broccoli, tomato, carrot, pickled onions, and a sweet white nectarine.

I Love Watermelon (Radish)! Bento
You can't see the burger in the photo, but I tried a new meatless recipe. It consists of about a cup of roasted sweet potato, a cup of brown rice / barley, and a cup or two of black beans, processed along with sauteed onions, garlic, cumin, and Worchestershire sauce to taste. The patties stuck together pretty well, which often is not the case (in my experience) with bean burgers. I melted cheese and served with tomato slices next to a side of cabbage / onion / carrot slaw tossed with vinegar, shoyu and a bit of superfine sugar. The last section of the LunchBots Trio contains the miniature spring selection of fruit at my farmers market: strawberries, apricot and nectarine. We have watermelon too, but the cheddar bear is actually enjoying a slice of watermelon radish. Those are good too, even if they're not quite as sweet!

Pikachu Chili Bento
Today the kids got vegetarian chili in their bento; chock full of whatever I could find in the fridge and pantry. The top tier has the usual colorful fruits and such, along with what's currently pickling in my fridge: carrots + daikon, red onions, and bittermelon + cauliflower. That last one is kind of a tough sell. I think I'm going to try adding something else to counter the bitterness; I have some ideas. And since I was in a creative mood, I decided to freehand a little cheddar Pikachu. I used my tiny paring knife and carved out his face and body, but don't look too close at his back leg. A little nori and carrot detail and voila! Hey, it wasn't that hard after all. ^_^

Black Bean Burger Cheddar Jack Bento
Counting down the final hours before Halloween... so I guess I can fit in at least a couple more. This one has two black bean / black rice burger patties on lettuce (protein style) with a melted cheddar jack-o-lantern on top. I used the method I described here, based on the original garbanzo bean recipe I used here. I put some ketchup in the little green container, and added some blackberries, corn, carrots and a strawberry to round out the meal. Egg Salad Pita with Cheddar Jack Bento
Okay, I only have about a week left for Halloween bento so I better get moving. Today I made a quick no-cook bento for MisterMan using a sandwich round pita. Have you seen these? They are pocket sandwich rounds which are perforated along their diameter so that you can tear them neatly in half to have two pita pockets. How convenient! I lined this one with lettuce and filled with a few scoops of egg salad. A slab of cheddar carved with a small paring knife into a jack-o-lantern face adds the Halloween charm. Note: if you use a slice of processed cheese, you could do the carving MUCH more easily. But we don't eat prepackaged cheese slices around here. Only the real, extra sharp deal! So he's a little messy, and cracked on the edge, but that just adds to his character. There is a cup of corn off the cob, another of homemade pickled cabbage, a sprig of steamed broccoli, a couple of strawberries (it's not strawberry season anymore, and I really need to stop buying these), and a bunch of lil' grapes.

Mini Burger and Cheddar Jack Bento
A fun bento that the kids totally loved: burger and fries. Woohoo! Okay, they were turkey oat burgers and oven-roasted fries but still. I also snuck in some roasted kabocha, a couple colorful carrot sticks, broccoli, and a cup of red fruit: pluots, strawberries and raspberries. The burger is topped with none other than our favorite smiling "jack" - I know, I should have used jack cheese! Sheesh. What was I thinking? One more week of jack-o-bento to go... I think I'm gonna be able to pull it off. Hey, maybe next year I should go for a whole month of jacks! Nah only joke..
