Chicken Rice Salad Bowl


Welcome to my current favorite kind of lunch: the protein bowl! I like it because it's very simple to make and the only rules are that you should use as many different varieties and colors of fresh and minimally processed foods as you can. I like to use a whole grain carb base like rice or pasta, salad greens, cruciferous vegetables, fruit, and protein.
There are tons of cookbooks offering great ideas for protein bowls, and I got the idea for this bento from Bowls of Plenty by Carolynn Carreno.

Vietnamese Bowl with Sweet and Tangy Vinaigrette

Marinade:
1/4 C rice vinegar
1/4 C sesame oil
2 T soy sauce
2 T honey
1 lb. skinless chicken breasts, thin

Marinate chicken for 2 hours, then cook chicken until caramelized, 3 minutes, then turn and cook 5 minutes more or until juices run clear. Rest for 5 minutes before slicing. Lay over rice, add shredded cabbage, carrots, and other vegetables of choice (I used brussels sprouts and grapefruit segments). Serve with vinaigrette.

Sweet and Tangy Vinaigrette:
1/2 C canola oil (or other neutral flavored oil)
1/2 C rice vinegar (I also added ume vinegar)
3 inch fresh ginger, grated
3 T lime juice
1 T honey
2 garlic cloves, minced


For this Ecolunchbox Solo Cube I used chicken marinated in this vinegar shoyu sauce and then pan fried in a skillet. You can use other kinds of protein too, such as shrimp, beef, or even tofu. I made a mixed rice composed of brown rice, red rice, barley, black rice, and quinoa. I also added a tossed salad of shredded cabbage, grated carrot, and grapefruit segments. You can pack along this fresh citrusy gingery vinaigrette in a separate container to drizzle at lunchtime. Pan roasted brussels sprouts and halved grape tomatoes round out this square bento. So good, and good for you too!

Jack Skellington and Salmon LunchBots Halloween Bento

One more day until Halloween! Can you stand it? I don't usually pack rice for my kiddos, but I made an exception here so that I could fashion a creepy Jack Skellington riceball for TinySprite! The Lunchbot Quad also allows me to keep the salmon and brussels sprouts separate from the roast potatoes and carrots, and the teeny baby strawberries in their own little corner. Happy Halloween Eve!

Salmon and Brussels Bento

I haven't used the magic round bento in a long while, and just realized it's probably too small for MisterMan now. But I think it might be appropriate for TinySprite now? The nice thing about this bento is that you don't really have to fill up each section to the top; most things will pretty much stay in their own compartment. It does look like I filled them up today though, doesn't it? Actually she got a piece of mustard roasted salmon (cut in two), some roasted baby potatoes, and roasted shredded brussels sprouts (yep, all in the same pan). Her typical pickled veggies fit in a second wedge, and the third holds a scattering of berries and mandarin segments. Well, that was easy! I really must start using this box more frequently again.

Snowman Quail Egg Christmas Bento

One week until Christmas! Here is my last Christmas themed bento for the year. It's another snowman, this time made with a nori- and carrot-decorated quail egg. A little blue hat, and there's a happy friend waiting to enjoy lunchtime with TinySprite! I used my EcoLunchbox Solo Cube with 4 silicone cups containing sliced bratwurst sausages, sauteed shredded brussels sprouts topped with parmesan and garlic powder, Greek yogurt with homemade granola and a perfectly sized satsuma mandarin. I don't normally pack yogurt without a lid, but the layer of granola (Alton Brown's recipe) helps keep it in place. I like how everything fits in here snugly, and makes a colorful, festive holiday bento. Merry Christmas, friends!

Breakfast For Lunch Bento

I find that I tend to use the LunchBots Quad to try to give me some inspiration on days that find me kind of tired (or lazy). They're great for using up whatever odds and ends you happen to have lying around that don't seem to be enough for a whole lunch. Well, guess what? When you put them all in here, they somehow come together to add up to a complete and filling meal. I had a couple eggs and a sweet Italian sausage so I quickly tossed them in the frying pan to scramble up together. Topped with a few green onions, it'll make a tasty protein serving for TinySprite. The last of the roasted Brussels sprouts and a few carrots fill out the veggie section, and I squeezed a cup of cottage cheese / blueberries / pumpkin seeds alongside some baby super-ripe strawberries. The last section holds watermelon balls, because we're clinging to summer no matter what the calendar says. How about you?

Steamed Cod and Roasted Veggies Bento

I'm really digging this LunchBots Quad bento box for my preschooler now. Her overall appetite is less these days, so this way I can offer a variety of foodstuffs in smaller quantities while keeping them all separate. Strangely enough, it's the strawberries and carrots that have been coming home lately. Does she not like strawberries?? I can't fathom that. Everyone loves strawberries, don't they? Anyway, in this bento I've arranged: steamed cod with shoyu, ginger and green onion, roasted shredded Brussels sprouts dusted with parmesan, tiny roasted taters, a star-cut radish, carrots, grapes, strawberries and blackberries. Did I mention how much I superlove this box? Really awesome! Going to be using it a lot this coming school year. ^_^

Mama and Baby Easter Chicks Bento

TinySprite asked for a Mama and Baby chicks bento, so here they are! I'm not expert with the egg white zigzag cut, especially when the yolk is so close. I'm told if you want the yolk to be perfectly centered, you must constantly roll the egg during boiling. Um, okay; that's why mine will have to be off-centered. The trick is to use a small blade and work with a light touch, but you can see that I punctured the yolk a few times. No matter, TS was still thrilled to see this duo! I'm so happy I've been able to use my supercute wings picks so much this past week. Here, the mama is flapping her wings in happiness over her hatchling chick's appearance. Aww! There's also miso butterfish (method and recipe here), roasted kabocha (tossed with parmesan) and brussels sprouts. Yes, I've taken to tossing all kinds of vegetables with parmesan, and you know what? It suddenly makes them a lot more desirable to the kiddos. The rest of the bento contains ripe strawberries, blueberries and grapes. That's it for the Easter bento at our house for this year. Hope you all enjoy a wonderful weekend. 5-Spice Chicken Panda Bento

Today's cute panda bento box holds shredded brussels sprouts (sauteed in olive oil, mirin, then tossed in sesame oil), steamed Okinawan sweet potato "flowers", some roasted 5-spice chicken, and sweet potato "fries" tossed with parmesan. The upper tier holds a mini cutie clementine, strawberries, blueberries and blackberries. The lid didn't close down over the clementine completely, and I didn't want to peel off the star-shaped cap, so I just smushed it down and secured it with the elastic belt. No worries! It does seem like a big bento for my preschooler, but actually this box is pretty tiny. Her appetite varies a lot every day, but I'm hoping the different flavors in this one will keep her interested. She's not big on greens so the brussels might come home. I'm not too concerned about it because both kids down a green drink daily. I'm so happy they really love it, and even consider it dessert after dinner. Woo!

Today's Lunchbot Trio is packed with the salmon of the week, roasted in olive oil and shoyu. I also roasted some thinly sliced Brussels sprouts, after tossing with fresh-ground pepper and Parmesan. The kabocha slices were -yep!- roasted as well in the fish pan. There was just enough room in the vegetable section to slip some steamed Okinawan sweet potatoes and a grape tomato in there. The longitudinal fruit section holds cara cara orange wedges, a strawberry and some cherries. How handy is this box? This bento didn't take any time at all to pack. Of course, there aren't any cute details, but nothing that a few food picks can't fill in. Even on a busy midweek day, you can still find a few minutes to pack a cheerful lunch for yourself or your child. And to be honest, I always choose divided boxes on days like this because half the job of organizing the food is already done for me. I really recommend to have at least a couple of these boxes on hand. My other go-to is my round divided box (see it in action recently here). Happy Wednesday!

First Bento of the Year!

Hellooooo out there! I haven't posted a bento for, um, it seems like forever. We had a school break over the Christmas and New Year holidays, and I didn't make a bento the whole time. Didn't even think about bento. I was afraid I'd forgotten how to make one again. But here I am, 3 weeks after the last one. It might look a bit messy and thrown-together, but it qualifies! I found a beautiful wild salmon filet so decided to roast it with a splash of olive oil, garlic powder and dried herb mix. And since the oven was on, of course I also threw in some halved brussels sprouts and sliced kabocha. While everything roasted away, I got the brilliant idea to try slicing the kabocha thin into chips. Could I get the kids to crave them if I called them kabocha chips? And would they get crispy? Wait til the end of the post to find out! I placed everything into some green leaf lettuce, and tucked in a red radish and some Okinawan sweet potatoes for color, and used the (included) stainless steel cup for cottage cheese with blackberries, sunflower seeds and pumpkin seeds. There are also a few raw carrots in there. The cup comes with a tight-fitting plastic lid to ensure the contents stay put, which is very convenient. Oh, and about the chips? Although they didn't crisp up completely, I played them up, made lip-smacking yummy sounds, and sure enough they clamored for "More chips! Kabocha chips!" Success. Muahaha!

Ono Pork & Sweet Potato Fries Bento

This year the kids seem to have a lot more after-school activities than last year, but maybe it's just the scheduling that makes it seem more hectic. Even with only one activity per kid, there are some afternoons where we seem to be rushing from one place to the next, changing uniforms in the car, and squeezing homework in between somehow. After a few very late nights, I've wised up: I dusted off the slow-cooker and plan to use it on those days when we don't get home until 6:30pm. Here's the result of the most recent slow-cooker night - My Mom's Ono Pork Roast (see my method and recipe here). The 3-pound pork shoulder should last for more than one meal, and there are lots of things you can do with the leftovers. We've shredded and fried the meat and made tacos, which are really good. To go along with the sliced pork here, I've added Okinawan sweet potato, baked sweet potato "fries", and roasted brussels sprouts. The fruit section contains a late-season plum, grapes, and raspberries. In my favorite LunchBot Trio!

Salmon and Polenta Jack Bento

In today's LunchBot Trio I've packed some wild salmon marinated then broiled in a molasses, shoyu, garlic and ginger sauce. There are some diced roasted potatoes and quartered brussels sprouts in the next section, topped with a polenta jack-o-lantern. Polenta is excellent for carving, in case you were wondering. It's a perfect consistency and quite easy to cut. I recommend it. I made mine with grated white cheddar, but I bet if I had used yellow cheddar it would look more pumpkin-colored. The rest of the bento contains carrots, Okinawan sweet potato, grapes, strawberry and raspberries. Have I mentioned how much I love this three-sectioned box? It's so practical and handy for keeping separate flavors separate. It's hands-down one of my favorite bento boxes.

The kids get butterfish misoyaki, one of my favorites (recipe here), pan-fried kabocha, and oven-roasted potatoes and Brussels sprouts. It was so hot today, and yet here I was roasting a bunch of stuff. What? This is the kind of bento I like to pack in the Fall; it's full of comfort food and warm flavors. There's also some carrots, juicy pluots (this one had dark red flesh and was pretty sweet, actually), and grapes. And a couple of Okinawan sweet potato fish shapes to round out the color spectrum. This is one bento that I might really love for myself. ^_^

Shoyu Chicken Round Bento

Okay, time to start cooking again. Today I packed MisterMan some shoyu chicken, along with roasted halved Brussels sprouts and kabocha pieces (I tossed those veggies in the shoyu sauce too). I'm pretty pleased with how I managed to get all the cut segments of exactly one half of a cara cara orange to fit perfectly into one section, and topped them with halved grapes to echo the spots on the radish "shroom" in the center. There was also just enough room to squeeze in a luscious red strawberry to round out this bento. This round box makes bento-packing almost effortless, which is why I love it so much. Everything is so ordinary and quick to prepare, but it still manages to look bright and appealing with minimal arrangement. I think my boy will like this one!

Misobutterfish Bento and Bento4Japan

I used a nice butterfish filet for the kids' lunches today. Misoyaki is my favorite preparation of this fish (recipe here). I like it with a bowl of hot rice, but my boy will prefer it as is in his bento. I've packed it in lettuce leaf, and it almost looks like a misobutterfish salad here, topped with steamed satsumaimo flower cutouts. It looks like a small piece of fish but don't worry; there's more underneath. After the fish was done I pan-roasted some sliced kabocha and halved brussels sprouts and tossed those in here too. The fruit section contains cara cara oranges, grapes, raspberries and blueberries.

Mochiko Chicken Bento

I made pseudo-mochiko chicken (oven-roasted instead of deep-fried), and used a slightly different recipe this time. The method (I originally found at Hapa Bento's site but adapted a bit) is the same, though.

Per pound of chicken thighs (cut into cubes):
4T cornstarch
4T mochiko
6T shoyu
4T sugar
2T sake
2 eggs
2T chopped green onion (white part), chopped garlic (to taste), and grated ginger (to taste).

Marinate a few hours, then bake in preheated, oiled pan at 400F. Turn to get all sides brown and crispy. It won't be as crispy as deep-fried, but it's still quite tasty. You can sprinkle with sesame seeds after (which I forgot to do) and serve with rice. Yummy! Both kids get chicken, roasted Brussels sprouts, steamed broccoli and yellow cauliflower, sweet potato, and assorted fruits (cara cara oranges, grapes, berries, and a mini mandarin). These bentos look the same size, don't they? Eek! I'm interested in whether she'll end up eating the whole thing. She LOVES chicken so I wanted to make sure she had enough, but she has a tendency to eat the fruits first. Plus, she's a slow eater. My boy's bento is deeper and actually has a lot more chicken, and it's packed a lot tighter than hers. I have no doubt that he will finish his :)

Rudolph and Misobutterfish Bento

My favorite fish, butterfish misoyaki. So easy and so yummy! I added some red rice mini-musubi with cherry picks, carved carrots, steamed shoyu Brussels sprouts and a shoyu quail egg decorated as Rudolph with nori eyes, radish nose and ears, and the very versatile and useful bone picks for antlers. There's also a plum. I have no idea where it came from, but it's really not sweet at all. Luckily there are black grapes and satsuma mandarin to make up for it. Here's a closeup of Rudolph. Aww...

Tomato-chan Bento

Went out for dinner today, since it was my *birthday* -- so I made a quick batch of balsamic vinegar chicken to pack into the double bentos today. They're both pretty much the same. And are you surprised to see kabocha in another form as well? Since the pan was already coated with balsamic sauce, I decided to quick steam a few Brussels sprouts and kabocha, then fry them all up in the same pan. Super easy, right? And if you have kids that might balk at plain steamed veggies or you can't spare the time to whip up a special veggie side, it's the perfect way to add flavor with minimal labor. If you look at my bento style, you'll see that I often re-use sauces for the protein as well as the veggie. In this case, the sweet balsamic gives a touch of bite to the mild kabocha and my girl almost gobbled them all up before I could save some to pack up. I quartered the Brussels sprouts to speed up the cooking. Some decorative cucumber slices serve as baran, and I included colorful carrot skewers to add focal interest. They both got cinnamon-sprinkled apple slices, and MisterMan had extra room so I added cottage cheese with raspberries, sunflower seeds and wheat germ. The cute touch in both is a tomato character, which was inspired by Tomato-chan, from a clip a twitterpal Alissa passed along. Warning: if you link, you might find the song stuck in your head awhile. Boo! Bento

For MisterMan's bento I made balsamic vinegar chicken, based on Maki's recipe. I simply mixed equal volumes of balsamic vinegar and shoyu, marinated overnight, and oven-roasted the next day. I cut the chicken into smaller pieces so they'd cook faster, and also for ease of eating. You can sprinkle with sesame seeds, but I totally forgot about that. It's really good, and I love the way the chicken comes out a rich dark brown color. Since I was using the oven I also roasted some tomatoes and brussels sprouts. These I tossed with garlic powder. Everything nestles in a green lettuce leaf, as usual, along with a piece of corn on the cob decorated with purple and orange carrots. In the fruit section I put some black grapes, a few nectarine slices and a tiny tangerine. Since I had another section I scooped some yogurt and topped with letters spelling Boo! cut from nectarine and purple carrots. Only one bento today; TinySprite hung out with me for the day. I've noticed that the days she has off from preschool are days she seems to catch up on napping. Yay!

Shoyu Chicken and Jack Bento

Shoyu chicken bento today, with sliced lotus root (renkon) simmered in the same sauce. Also, roasted baby Brussels sprouts and purple potato slices. I filled in with an orange and a yellow pear tomato for color. Other section has a purple carrot skewer, white nectarine, strawberry, black grapes (underneath) and a carved jack o'lantangerine. Today's the first day I've thought about roasting stuff in a long time -- guess that means fall is just about here. I hope we cool off gradually though; today was a perfectly comfortable 76F. ^_^
