Pizza Bento!
I haven't used my Keroppi sandwich bento in a long time; it's nice for certain foods that are large and bulky - like sandwiches. I used to pack bánh mì in the top portion for MisterMan in summertimes past. Today I used the extra-tall part to pack a pizza for TinySprite. This one is homemade with arugula, sauteed mushroom and zucchini and melty cheesy toppings on a gluten-free crust. I used Bob's Red Mill gluten-free pizza dough mix for the first time. It's very, um, different than regular pizza dough. If you weren't exactly sure what gluten is or does to baked goods, try this pizza dough and you'll understand. For one thing, it's not stretchy or elastic at all. It's also very wet and doesn't stick together very well. While I was rolling pressing it out, I wondered how in the world this was going to make a pizza. It came out pretty nicely crispy though, and held up to the toppings very well. I think the trick is to press it as thin as possible. TS loved it, so that's what matters! On the bottom section I gave her some cottage cheese with sunflower seeds, by her request, and some carrots, strawberry and blackberries. Gluten-free experiment seems to be progressing quite well!

Salmon, Tots and Kale Bento
Today's bento is filled with omega-3s, antioxidants, and high-energy foods to aid the brain activity of my kiddos: broiled salmon, kale chips, roasted potato tots, carrots, and a bunch o'berries including straw-, black- and blue-. Packed in the ultra-cute froggie two-tiered bento box and my vintage Keroppi folk from the 80s. Tomorrow is a big day for both of them: TinySprite has an interview for Kindergarten Readiness, and MisterMan is participating in the district-wide Spelling Bee. We're hoping there isn't too much in the way of dexterity tests for TS, seeing as how she's currently limited to a single arm. Luckily her dominant arm and hand are unaffected, so she can still write. If you hold the paper down. As for MM, he's reviewed the word list so many times I find myself using those words in my daily speech more than usual, and each time I do ("Look how regal the dog looks when he crosses his arms like that") I hear him spelling the word in the background ("R-e-g-a-l"). We're crossing our fingers they both do well tomorrow; so early bedtimes for them tonight it is!

Pink Bunny Pizza Bento
Sweet potato pizza was for dinner and I made some extra for MisterMan's bento. I adapted the recipe from Gourmet Mom on the Go. It's easy and quick to make, and it really does taste great! Really!
Here's what you need:
2 medium sweet potatoes (I used regular ones, satsumaimo, and Okinawan sweet purple ones. All good!)
Ready to bake pizza crust (I've used whole grain lavash wrap and pocketless whole wheat pita rounds)
5 oz. mascarpone cheese, or 5 oz. cream cheese mixed with 2T sour cream (I've used the cream cheese mixture and it's delish!)
olive oil and balsamic vinegar
shredded baby spinach
roasted garlic
garlic powder, rosemary, thyme (optional)
Here's what you'll do:
Drizzle olive oil on your crust and spread evenly with the cheese and roasted garlic.
Sprinkle with shredded spinach.
Layer the peeled, thinly sliced potatoes over the cheese.
Sprinkle with garlic powder and herbs, if using.
Drizzle top with olive oil.
Bake at 425F for 18-25 minutes or until potatoes are soft and crust is crispy.
Remove from oven and drizzle with balsamic vinegar.
Slice and enjoy!
One of the best things about this pizza is that you can hide any number of goodies under the potatoes. My 3 year old will pull off all the spinach if it's sitting on top, but this way she never even sees it. It's awesome. I put two pieces of pizza in the basket part. These were baked on soft lavash, which crisped up very well. The one in the back has Okinawan purple potato, and the one in the front has satsumaimo. In the lower tier I put my pink bunny molded egg. You can see the details on this one better, whew! It helps to dye it in beet juice, I think. I also added some white peach, a half apricot, half strawberry, red grapes and a sprig of steamed broccoli. Yummy!

Teriyaki Salmon & Pink Heart Rice Bento
Today's bento has teriyaki salmon on a lettuce wrap, with a roasted sweet yellow pepper vase of roasted pencil asparagus. Two red radish heart details make it eligible for the RED contest at hapabento's blog!
I also made a pink heart riceball using beet. On top of it I place a carrot sakura blossom with peapod and sesame seed detail. As an aside, I thought I would try to make pink rice during cooking by throwing a washed, peeled raw beet into the rice cooker. Maybe some of you have tried this before? I thought all the beet juice would come out and soak into the rice while cooking. Ha! What I ended up with was a nice cooked beet sitting on top of a nice batch of rice-colored rice! So I had to dye the rice afterwards, in a small bowl with the chopped up cooked beet and a little extra water.
Fruit side has blood orange slices, red grapes and kumquat halves. I put nori detail on them, which sounds weird, but kumquats have a strange taste -- kind of tart / a bit sweet -- anyway, so what's a little nori gonna do?
You'll also notice new utensils I got as a gift from a dear friend! It's keroppi, and his little face is stamped on the fork and spoon! So cute, thank you!! I have more too... and you will see them in the near future... ^_^

Keroppi Rollups Toddler Bento
It's Keroppi! If you follow my tweets, you'll know that I was so excited to find this vintage Keroppi bento box in a second hand store I was browsing through in Hawaii recently. I was such a big fan of Keroppi as a schoolgirl, which does date me I suppose. Anyone else with me on this?
Anyway, it's such a tiny box...it's really kind of impractical. So, I decided its inaugural use would be as a snack for my toddler. After I made the rollups, though, I realized it was a pretty hefty meal after all. I used a fried egg and rolled with ham, spinach, and grated cheddar cheese, which promptly melted nicely on the hot egg and ham. I added a couple of grape tomatoes for color, which she loves, and in the tiny divided section I put 3 kumquats and some kiwi flowers.
Well, she took one bite of the kumquat and politely handed it back to me. It wouldn't be the first time I was the recipient of half-masticated foodstuffs. Such is the job of the mom, right?
Next time I think I'll slice them up thin and mix them in with pineapple or something else intensely sweet. Ha! I'll figure something out. ^_^
