Mabo Tofu Chicks Bento

Mabo Tofu Chicks Bento by sherimiya ♥
Mabo Tofu Chicks Bento, a photo by sherimiya ♥ on Flickr.
Today's bento has mabo tofu, one of my favorite meals which I hadn't made in a long time. When I make the kids' version I don't use any chili sauce at all, sadly, since they have no tolerance for it. This is why theirs looks so brown. After they get their serving, the adult version gets a few tablespoons of chili paste added in, which adds the nice red color that I love. For this batch I used ground chicken, and I also stirred in an egg, which is why there are yellow bits visible in the closeup. I scooped the mabo tofu over some lettuce in this bento, and I left out most of the sauce to keep it on the less drippy, bento-friendly, side. For dinner they had it served over rice, which is my favorite way to eat it. I added a red leaf and dandelion green salad with sliced grape tomatoes and feta cheese, carrots, strawberries and grapes to round out the bento. And for a final Easter touch, I put two baby chicks sitting on a leaf together. They are made of yellow carrot, with orange carrot and nori details. Cheep cheep!

Ume Somen Salad Bento

Ume Somen Salad Bento, originally uploaded by sherimiya ♥.
It's still mighty hot here, but gradually getting cooler. Today's high was only 87F, so pretty nice actually. I had boiled some ume somen yesterday so it was nice and cold today for lunch. It's a pretty pink color and I've never had it before so I was interested to see how it tastes. Straight out of the package it smells sweet to me, kind of like strawberry. Maybe that's just psychological due to the color; I don't know. After cooking, it still had a sweet taste to me -- not salty or sour at all. Anyone else have this experience? Anyway, it does retain its nice pink color after cooking, so that's cool! I lay some inside a lettuce leaf, then added shiitake, julienned cucumbers and carrots, green onions, and sesame seeds. I added some ocean salad in the corner, and in the other corner I slipped in a strawberry bottle filled with somen tsuyu. I finished with a maple cut radish for red color. The top tier contains the rest of the bright color: dapple dandy pluot, red grapes, purple cauliflower and yellow carrot stars. I think I got all the rainbow colors in this one! I hope it serves its purpose and cools down my boy at school tomorrow.

Chasoba and Fruit Bento

Chasoba and Fruit Bento, originally uploaded by sherimiya ♥.
More hot weather means we need another cold (and non-cook) lunch for relief. I love eating out of an icy stainless tiffin, so that's what I used to pack today's bento. He gets chasoba on a bed of crispy lettuce, accompanied by shiitake, krab sticks, ocean salad and green onion. I packed the soba tsuyu in a separate squeeze bottle which I lay in the top tier. The top tier also contained a clementine and a variety of fresh summer berries. I used an ice pack so it all stays super cold for him in this heat. No cute details in this bento, but the variety of fresh colors and flavors should serve to bring out his appetite :)

Sushi and Caterpillar Bento

Sushi and Caterpillar Bento, originally uploaded by sherimiya ♥.
This Bay Area heatwave we've had for a couple days is just what summer is supposed to be like, finally! But soaring temperatures means I don't feel like cooking. Luckily there are ways to pack a bento without cooking. This one contains sushi made with mixed rice and sardine furikake, topped with decorative carrot flower shapes. On the side I filled a lined cup with ocean salad and krab. I added pickled ginger to the little side section. On the other side of this double sushi box I placed steamed broccoli, some Okinawan sweet potato slices (with a radish slice face), grapes and nectarines. There's a slot in the center to hold a pair of chopsticks. I hope MisterMan finds this lunch a cool one that's fun to eat. Hope you're all keeping cool this week too!

First Day of School Bento

First Day of School Bento, originally uploaded by sherimiya ♥.
The first day of school! MisterMan started 2nd grade today, and to commemorate the day, he's bringing an "apple" to school. Okay, it's not really an apple; it's a radish with sesame seed and edamame detail. It sits atop a 4-bean spinach salad in a silicon cup. There are flower-carved carrots on the side. Sliced roast chicken in a lettuce leaf fill the next section, and the fruit selection includes grapes, cherries and a strawberry. A simple bento that contains his favorite foods is sure to give him energy to get through a full school day. And a bonus: this bento qualifies for the B.O.M.B back to school theme at Hapa Bento. Don't forget to enter! Have you started school yet? If you're still enjoying summer, lucky you!

Added this bento to What's For Lunch here. You can add yours too!

Panda Somen Salad Bento

Panda Somen Salad Bento, originally uploaded by sherimiya ♥.
Okay, starting to cook a little for bento now. Does boiling somen noodles count? It's been so hot here that somen salad is really the best thing to cool down with. I topped this one with shredded carrot, ocean salad, green onion and furikake. You could also add lettuce, egg, ham, krab, kamaboko, or whatever you like. I put some tsuyu in the round blue container for him to pour on the somen just before he eats it. To the side I put the standard three: steamed broccoli, yellow cauliflower and romanesco. In the bottom tier of this cool skinny bento I put all the fruits: cherries, white nectarines and -- yes -- lychee!! It's not summer if I don't make my traditional lychee/blueberry panda. So here he is. I also added some other panda pals too, so they can have a panda party in the skinny bento! Not sure how I feel about this shape yet. I've seen others use it so elegantly, but I feel like I have to handle it carefully or it'll flip out of my hands and fall straight on the floor. It is unique though, isn't it?

Panda Egg Wraps Bento

Panda Egg Wraps Bento, originally uploaded by sherimiya ♥.
I guess it's sandwich week, 'cuz we've got another sandwich today! Well, wrap. This one has ham, cheese, avocado, green olive tapenade and spring greens all rolled up in a whole wheat tortilla. I wrapped them in wax paper (bottoms are also folded in) to minimize fallout while the boy eats.

This is the very first time I've used this bento box without all the inserts, and I've used it at least 20 times! I was a little nervous at first, but everything just fell into place. I would have taken all the inserts out, but I was pretty sure the panda egg in his asparagus forest would need extra propping up. The panda is a hard-boiled egg with nori and radish (eye) details. I free-cut the nori, and don't know why he's so grouchy looking. Maybe he was hoping for actual bamboo.

I also added a few baby carrots and a half radish in that cup with him. Finally, I squeezed in a few supersweet strawberries and some red grapes. We had another beautiful spring day today! We'll have to appreciate this weather while it lasts, since the rains are coming back this weekend. Have a good one, friends :)

Smoked Salmon Bagelwich Bento

Can't believe our week off is over already, though in a way it feels like I've been away for quite a long time! I haven't been thinking about bento at all this past week, so it was tough to get back into the bentomaking routine again. Today was a beautiful day and we enjoyed our lunch outside in the garden. As I was eating, I thought, what a delicious lunch....why not make it for bento?

I used whole wheat bagel thins (just like sandwich thins but with a hole!), spread with cream cheese, and layered smoked salmon. If I had pickled onions and dill I would have added it, but then again I think my boy prefers not quite so many levels of aromatics. I placed some green lettuce around it, and he can put it in the quartered bagelwich if he likes. I also gave him a cup of spring greens with sliced peppadews and twin kumquats. I had this exact lunch myself today, so I know what a great combo it is! For dessert I threw in a strawberry and some grapes. Since this bento looks a bit ordinary, I added a couple of cute animal baran to go along. There; now it's a fun bento!

Happy Monday!

Red Spring Bento

Red Spring Bento, originally uploaded by sherimiya ♥.
This bento ended up with lots of red in it, which wasn't planned, but which nicely represents the feeling of spring awakening with lots of color!

Along with more chicken and furikake rice, I added a piece of steamed broccoli and a giant cherry tomato. The salad is composed of watercress tossed with diced Cara Cara oranges (with their nice dark orangey-red hue) and crushed walnuts. The third section has cottage cheese studded with ripe strawberry slices and sprinkled with pumpkin seeds and wheat germ.

And because I am currently obsessed with beet-painting satsumaimo sakura blossoms, there are a bunch of those too! Instead of fingerpainting them, you can also simply steam a slice of satsumaimo with a slice of beet on top (you can layer them alternately too) and the beet color will stain the imo it's touching. The color comes out uneven, lending a kind of "tie-dye" effect which is really cool! It might have been prettier to make a lighter pink color, but I guess I got kinda carried away. Well, plenty of chances to try again! ^_^

Four Squares Bento

Four Squares Bento, originally uploaded by sherimiya ♥.
On my recent trip to L.A. over the long weekend, I scored a bunch of new bento stuff. Yay! This multi-sectional box is one of them. I found this one at a store in Little Tokyo called Tokyo Japanese Lifestyle. It's a very cool store, and you should check it out if you're in the area.

This box also came as a two-tier option, with the lower tier a box of the same size without dividers or containers. Each section of this box holds 170 mls, and the label claims the total volume is 1.2L. I guess this takes into account the convex lid (which I don't show here), which does allow you to stuff extra food in there.

Anyway, this size is just perfect for my first-grader. I don't have to fill up the sections fully, but yet each stays separate from the others to keep sauces and flavors distinct. I love it!

For the first use, I gave him Singapore rice sticks in the red box, a green salad with marinated artichoke hearts and grape tomatoes topped with crumbled feta in the green box, pan-fried garlic enoki and broccoflower along with 2 carrot goldfish in the purple box, and a selection of desserts in the yellow box: cherries, kumquats, a beautiful strawberry and a piece of homemade zucchini bread.

This box is a little wider than my others, and it barely fits in his insulated lunch tote, but I squeezed it in there. What do you think? It's a pretty fun box, eh?

Sticky Rice & Wreath Bento

Sticky Rice & Wreath Bento, originally uploaded by sherimiya ♥.
Made yummy sticky rice! Love to use sticky rice for bento. All the goodies are already in there, and the kids really like it. I added a small salad with marinated artichoke heart, carrot sticks, peapod vase with flower, and cherry tomato "wreath"! It's just a circle of tomatoes, but I'm calling it a wreath, and it's my festive Christmas detail in this bento :)
Plum and yellow carrot flowers for dessert.

Do you have any favorite "one-dish" meals you like to prepare because it's a fast and easy way to get the protein and veggies on the table all together? As you may have seen, I do... and I am always on the lookout for more!

Honey Garlic Pork Bento

Honey Garlic Pork Bento, originally uploaded by sherimiya ♥.
I made honey garlic pork ribs, and I have been wanting to use shiso recently ( I did use it in tamagoyaki a few days ago -- it was good!). After the meat is cooked through, I sprinkled the shredded shiso on top, so it didn't really cook. It adds a nice minty flavor; very nice.
So, MisterMan got some pork slices, and a brown / jade rice bunny onigiri, but I used a sandwich mold instead of a rice mold, which was bad planning because I subsequently really had no way of sliding it out after I shaped it. So, anyway, it's a girl because I wanted to use the associated bow cutter, and isn't it cute? He also gets purple and yellow cauliflower, peapods, ocean salad, garlic sesame spinach, and tricolor tomatoes. Fruit section has yellow plum (don't know the name of it but it's sweet!), organic strawberry and blueberries.
