Pita Snack Bento


I wasn't planning to make a snack but the avocados are ready to eat *right this second* so let's do this. I love avocado on bread, long before avocado toast was even a thing. If I had more time I would fry an egg or add ricotta cheese or hummus and beets or apple slices and honey or... so many possibilities! How do you like to eat avocado?


In MisterMan's Ecolunchbox Solo Cube: whole wheat pita triangles topped with stuff. Pack as many as you can fit so they don't move around inside the box and just stack them nicely. 
Plus more blood oranges because they're still in season and they look so amazing. Have a great weekend!

Starry Penne with Meat Sauce Bento

MisterMan gets carrot penne with meat sauce topped with fresh grated parmesan and stars. The top tier has an assortment of strawberries, white peaches, steamed Okinawan sweet potato sticks, and homegrown arugula salad with shaved Iberico and walnuts. So excited that my arugula is growing so vigorously; I love this peppery green! I'm going to try to make fans of my kids as well, by the end of the summer. That's my goal. ^__^

Here's another bento from pre-vacation break; a super easy no-cook one. I made turkey colby cheese rollups, which is just a more fun way to pack a turkey colby cheese sandwich. First I flattened the bread with a rolling pin. You can cut off the crusts to make this neater (I didn't do this, as you can see - they might have rolled together more tightly if I had). Layer cheese, turkey, and fresh greens. You can add mustard or pickles if you like. Then roll tightly. I think I melted the cheese onto the bread first, before adding the rest of the ingredients. I rolled it in a makisu (a bamboo mat used to roll makizushi), then sliced into a thickness that would fit neatly in my stainless steel EcoLunchBox bento box. The rest of the box contains cherries and carrots, and the separate (lidded) container holds Greek yogurt topped with berries and a walnut. Can you see the face? ^_^

Bowties with Meat Sauce Bento

Today I fell back on another standard: pasta with meat sauce. This time I used miniature bowties, which I boiled in water I used for cooking beets. I was hoping it might turn the pasta red, but the best I could get is reddish-brown. As a result, it kind of blends in with the meat sauce. Oh well! I topped with a piece of steamed broccoli "tree" and a bright orange kumquat to add some color.

We have lots of ripe blackberries so I sliced some up to flavor the cottage cheese and topped with crushed walnuts and wheat germ. In the third section I tossed some edamame along with a skewer of purple and yellow carrots. Is it a happy meal? I think so :)

Pita Pizza and Fruits Bento

Hello bento friends! I have been absent from the blog while we spent time visiting the in-laws in L.A. this past weekend. This week is our spring break, so there are no new bento to be made (probably). Here, however, is one I made for my boy last week.

Homemade pizza on pocketless whole wheat pita bread rounds: pepperoni, mozzarella and spinach. Wrapped in brown paper. With a side of black grapes, carrots, strawberry, and blood orange mixed with cottage cheese. I realized too late that blood orange works very well at coloring cottage cheese (and probably yogurt as well); I could have had pink cottage cheese all week! Oh well. I also tossed some walnuts on top for crunch. A quick and simple bento to round out the week.

Red Spring Bento

This bento ended up with lots of red in it, which wasn't planned, but which nicely represents the feeling of spring awakening with lots of color!

Along with more chicken and furikake rice, I added a piece of steamed broccoli and a giant cherry tomato. The salad is composed of watercress tossed with diced Cara Cara oranges (with their nice dark orangey-red hue) and crushed walnuts. The third section has cottage cheese studded with ripe strawberry slices and sprinkled with pumpkin seeds and wheat germ.

And because I am currently obsessed with beet-painting satsumaimo sakura blossoms, there are a bunch of those too! Instead of fingerpainting them, you can also simply steam a slice of satsumaimo with a slice of beet on top (you can layer them alternately too) and the beet color will stain the imo it's touching. The color comes out uneven, lending a kind of "tie-dye" effect which is really cool! It might have been prettier to make a lighter pink color, but I guess I got kinda carried away. Well, plenty of chances to try again! ^_^
