Salmon and Bunny Triplets Bento

Our semi-weekly grilled salmon teriyaki over roasted diced garlic potatoes fits nicely in the magic round bento box ...and I can pass it along from MisterMan to TinySprite now. A single sprig of steamed broccoli, a tiny cup of corn off the cob, and a couple of carrots round out the vegetable section. Strawberries and grapes fill out the rest, and a trio of bunny-shaped Okinawan sweet potato slices adds a shot of vibrant violet. I like the deep sections of this box for my girl, because it's much easier for her to scoop out the food. Do you see the baby pumpkins? I'm trying to get into the fall mood over here, but the summery weather isn't helping. I'm feeling more in the ice cream mood lately... is it cooling down in your part of the world?

Twin Bunnies Bean Burger Bento

Today's bento is one for my wheat-free daughter. I made black bean burgers using the basic recipe I used here, but substituting garbanzo beans with black beans. I also used black rice to keep the color scheme. She's used to eating burgers "protein-style" (wrapped in lettuce leaves instead of on a bun), so I could've served it that way in her bento with no problem. You could layer a slice of homegrown tomato and grilled onions on top as well, but I chose to pack a double patty in here instead, in lettuce, alongside a silicone cup of homemade peach salsa. Peach salsa: have you had this? I've never tried making a salsa with peach and was dubious, but it is delicious. I diced some ripe peaches, tomatoes, sweet peppers and tossed with sweet corn. Refreshing, and it just screams "Summer!" I topped the burgers with cheese bunnies with nori faces, and the other side of the LunchBot Duo contains grapes, pluots and baby sweet strawberries. ^_^

Deconstructed Salmon Sandwich Bento

This bento is a do-it-yourself sandwich, featuring butteryaki salmon (see my method here), some wild greens, a few slices of buckwheat bread and provolone cheese. The components all fit nicely inside the separated section of this dual lunch box by Sistema. I wrapped the bread inside wax paper to keep it separate from the rest of the ingredients, and decorated with a triplet of provolone bunnies and a mushroom-cut radish. The other section is divided, and allowed me to fit quite a bit of extras: corn on the cob, broccoli, carrots, Okinawan sweet potato flowers and tomatoes on one side; and lychees, strawberries, superdark plums and blackberries on the other. The plums were so juicy I had to drain them off before packing them in! MisterMan loves these deconstructed bentos, and he gets a lot of attention during lunchtime while he assembles his lunch. A bright cheery summertime bento for my boy ^_^

Meatballs and Bunnies Bento

Chicken meatballs today, in tomato-cider vinegar sauce. This batch is made with ground chicken, oats, shredded zucchini, wheat germ, onion and my experiment: quinoa! I cooked the quinoa separately and added it into the meat mixture before simmering in the tomato sauce. Very tasty! There's also curried lentils with spinach and grape tomatoes in another section, black rice topped with two tofu bunnies and a radish "Easter egg", and the usual fruit portion with strawberry, grapes and kiwi. This 4- sectioned bento box comes in handy for meals like this one, with different flavors I'd like to keep separate. Festive, isn't it?
