Homemade Granola Recipe



I decided to make my own granola this past week because I keep hearing about how easy it is, and why not make your own so that you can be sure to include all your favorites? Plus it's good in bento and easy to take along as a snack during your kids' summer adventures. One of the best things about a recipe like this is that you can change it up however you like to your taste; there's no making a mistake here. I didn't add any dried fruit this time, but I might try raisins and dried apricots next time, since we always have those lying around the house. Just as I was spooning some out into my kids' cereal bowls, I heard about a recipe contest over at Nuts.com for National Trail Mix Day, which is coming up this month. Well, I had just made some granola so... in honor of National Trail Mix Day, here's my:

Basic Granola Recipe

1 1/4 C rolled oats
1/2 C each chopped assorted nuts (I used almonds, pistachios, and hazelnuts)
1/2 C pepitas
1/2 C sunflower seeds
2T uncooked quinoa

2T olive oil
2T honey
1 egg white

Combine all the dry granola ingredients in a large bowl. Mix together the oil, honey and egg white, then pour over the dry ingredients and toss to coat everything. If you have a lot of dry ingredients, you may need to increase the oil and honey.
Spread the mixture in a sprayed baking pan.
Bake at 325℉ for about 20 minutes, stirring occasionally.
After cooling, I tossed in a few spoonfuls of cacao nibs for fun. These aren't sweet, so I didn't use too much. You might use chocolate chips instead, or sweetened cacao nibs.
This granola comes out crispy and crunchy and tastes delicious on fruit, ice cream, yogurt, cereal, smoothies, and more... such as on its own as a Trail Mix!


Chop chop chop.


Then just spread in a pan and bake.


We ate some sprinkled over a bowl of fresh cut mango and cottage cheese. Yum!


You can also sprinkle cinnamon into the cooled mixture; it's a delicious addition. Hope you can try it!

Yesterday I made sugar cookies, impressed with a heart image (using my mini heart cutter) and sprinkled with home-dyed pink sugar. I made 40 for the two kiddos to take to their class Valentine parties, plus a few extra to sample. ^_^
TinySprite pronounced them cute. Chocolate almonds (her favorite treat) and a little cup of yogurt with raspberries complete the sweet afterschool snack. I hope you all had a wonderful Valentines Day! Wishing you lots of love, hugs and kisses today and every day :D

Chicken Adobo Bento

Today's Earth Day bento contains chicken adobo, a pea/jade rice cup with carrot and nori details made to look like a lion, cottage cheese with blackberries and chopped almonds, a few broccoli spears, and a fruit cup of mandarins and sliced kiwi.

I used Ivoryhut's recipe for the chicken adobo, although there are many variations you can try. Here's the recipe I used, adapted from Ivoryhut:

Chicken Adobo
8 chicken thighs
6 cloves garlic, smashed
1/2 cup shoyu
1/2 cup vinegar
1/2 cup water
2 T packed brown sugar
cracked pepper

Mix everything together in the pot you'll be cooking in.
Marinate at least 20 minutes.
Bring to boil, then reduce heat, cover and cook 15 minutes.
Remove cover, flip chicken, and continue to simmer until fully cooked, and liquid has reduced.

Super easy, right? The chicken gets nice and dark and tender, and the sauce thickens and becomes rich dark brown. The flavor is tangy and sweet, and the sauce is amazing over rice and with veggies. Your kids will eat the whole head of broccoli if you let them dip it in the sauce. Yum!

Finally, I used all stainless steel for this bento -- the box, cups, chopsticks and spoon (not pictured). Well, the heart and earth picks are plastic. All reusable. Yay!

Triple Chickie Meatballs

I made meatballs for this bento, using a mix of ground turkey, oats, onion, and yes -- kale! You're not really surprised, are you? If you keep the container of lightly steamed, chopped kale in the fridge, you yourself might also find lots of fantastically healthy uses for it too. And after bathing the meatballs in homemade barbeque sauce, they tasted yummilicious -- just ask the kiddos :)

Since everyone's putting Easter-y type creatures in their bento, I thought I would make some chicks. Okay, they're brown, but can you use your imagination? I gave them carrot beaks and sweet pea eyes, and used the barbeque sauce to "glue" them on. Also tossed in some roasted baby potatoes -- two kinds: new potatoes and rose fingerlings. I really like these little taters. They crisp up quickly and taste great with just olive oil and garlic powder. Nothing could be easier. A fancy cut carrot, some cherry tomatoes and some steamed broccoli fill in the gaps. In the cup (included with this EcoLunch stainless steel bento) is cottage cheese, triangles of sweet Cara Cara oranges, slivered almonds and wheat germ. This is my last Cara Cara, because even though I bought a whole bag's worth last weekend, the fam has been sucking them down like mad! Should have bought more.

I'm pretty happy with the look of this bento. Even if there's only one flower today!
