St. Patrick's Day Pot o' Gold Bento!



Happy St. Paddy's Day!  Today TinySprite gets a rainbow's end pot o' gold made from a piece of green pepper filled with egg salad and cheddar cheese coins. There are stars cut from steamed Okinawan sweet potato, red grapes, tomatoes, and mandarin cuties. Hope it's a lucky day for you!

Shoyu Chicken LunchBots Cinco Bento


Second time using the big-size Lunchbots Cinco, and like the first time, I packed chicken once again! This time it's shoyu chicken, with broccoli and potatoes on top of a few lettuce leaves. Pasta goes in the side (again!) with mushrooms and parmesan. Are you sensing a theme here? On top: chopped sweet red pepper, mandarin, and carrots. I like using this box, but for some reason I get nervous that I won't have enough to fill it. Maybe the third time we'll see something really exciting! Let's hope! ^__^

Hinamatsuri Girls' Day Bento!


For TinySprite this Girls' Day, I made her two mini ham sandwiches with lettuce and cheese. These rolls (King's Hawaiian sweet bread - so good) fit perfectly inside this two tier box that I think I got from Daiso many years ago. It even matches this fork with the same bunny design on the lid. Alongside the ham and cheese dolls with nori and pepper details, I have a purple sakura (Okinawan sweet potato), carrot flowers, blood oranges, kiwi, and a fan-cut radish. Happy Girls' Day to all the little (and big) girls out there!

Spooky Skull Cheese and Chili Halloween LunchBots Bento

It's heeeere! Halloween is today! For the final theme bento, I send the kids to school with thermal food jars of homemade chili (Thermos Funtainer brand for TinySprite, and LunchBots Thermal food jar for MisterMan). I decorated his with a mozzarella cheese and nori skull, and hers with a tiny baby bell pepper jack-o-lantern. The side boxes contain a variation of strawberries, grapes, plums and steamed purple sweet potato. With the weather getting cooler, they're welcoming the thermal bento more and more these days. Breakfast For Lunch Bento Pt. 4

We do like our breakfast for lunch. Especially when it's such an easy one to pack! This is just a section of an enormous 6-egg omelet that we had made for brunch. It was such a good one: packed with nitrite-free chicken sausage, mushroom, spinach, onion, tomato and peppers. Sprinkled with a little cheese and chopped green onion and cilantro, it should be a hearty lunch bento for the little girl. She herself packed the sides: a smattering of berries, carrots, and pickled cukes. And a few cheery friends to welcome her at lunchtime. Happy Monday!

Herby Chicken Lunchbots Bento

Here's the last bento for the week: and it's good old chicken and rice. I loved this combo when I was a kid, and my kids kind of do too, minus the rice. Sigh. But I find that they will grudgingly eat rice with furikake (and also in hot dog maki, fried rice, sticky rice, or jook), so I put a cup of it in here. This rice is black rice and pearl barley. I disguised it as a cupcake with a tomato "cherry". The chicken is just garlicky herbes de provence olive oil chicken, oven baked. I made more kale chips tonight, which didn't survive for bento extras. The rest of the LunchBot Trio holds a variety of pickled stuff, carrots, cherries, strawberry and baby peach. Oh, and a broccoli tree. Have a great day!

Cheesy Cauliflower "Mac" and Cheese Bento

I made up this meal. TinySprite has been asking for mac and cheese for a long time, so I figured it was time to make a batch. I noticed a recipe for cauliflower "mac" and cheese (in which the cauliflower replaces the pasta), and combined it with another recipe I saw which incorporated butternut squash puree into the cheese mixture. I also added onion and minced broccoli, as I have been known to do, and came up with this. I've noticed cauliflower used as a gluten substitute before, and I even used it to make a gluten-free pizza dough (here), so I guess it's probably nothing new. But it's kind of a nice change from macaroni elbow pasta. I packed it into the Hello Kitty thermal food jar, and decorated the top with a red bell pepper "flower". The side box holds pickled cucumbers, broccoli, tomato, carrot, pickled onions, and a sweet white nectarine.

Rubber Ducky Curry Bento

Packing some curry today (see the recipe I used here). I made it a lot more "soupy" than the recipe calls for, because I like it that way. TinySprite's Hello Kitty thermal food jar is topped with a handcut yellow capsicum "rubber ducky" taking a swim. The side box holds: a perfectly sweet and unblemished organic (tiny) apricot, sliced nectarines, baby strawberries, a steamed Okinawan sweet potato, and some pickled stuff. The weather's been cooling down a bit (a bit; down to the upper 60s), so this warm bento should be welcome!

May the 4th Lentil Sausage Bento

I know it's not May the 4th yet, but since it falls on Saturday this year, I'm sending MisterMan to school with his Star Wars bento today. I tried a new lentil potato sausage chard "salad", which can be served hot or cold. If you want to serve it cold, you can toss with balsamic vinegar or sherry vinegar. I cooked French lentils with diced purple potatoes, then added pan-fried chicken artichoke sausage, mushrooms, onion, garlic and celery. I tossed in shredded chard at the end just to wilt it a little. If you omit the sausage, it could be a vegetarian option. I thought it was pretty good, and refreshing on this hot day. The top tier holds a big strawberry, carrots, fancy-cut radish, broccoli, and pickled turnips and kumquats. Do you see the Star Wars reference? It's very simple, but I hope he gets it. Light sabers were cut from red sweet pepper and cucumber. Happy May the 4th (a few days early)!

Rilakkuma Chicken Miniburgers LunchBots Bento

Today I made mini chicken burgers for TinySprite. MisterMan is in the mountains somewhere, eating cowboy stew and soudough bread or something like that. With only one bento to make, I decided to take some extra time and make a cute one. I fashioned a bear face with ears, and added nori details to a piece of mushroom to make Rilakkuma; his sidekick Kiiroitori is cut from a yellow sweet pepper. There's also a panda egg on a bed of furikake rice, some Japanese slaw (shredded napa cabbage tossed with rice vinegar, sugar, shoyu and sesame seeds) -- the kids both LOVE this salad! -- and more supersweet organic strawberries and carrots. All packed in the sky blue LunchBots Quad. Happy Wednesday!

Easter Bunny Pals Deconstructed Fish Tacos LunchBot Bento

Today's bento is deconstructed fish tacos in the LunchBots Trio. I've packed fish tacos like this before (here and here and here and here), because there's no good way to pack fish and salsa inside a tortilla without everything getting soggy and falling apart. In fact, I'd rather just omit the tortilla altogether, but the kids love their bready carbs, so I added two bunny shaped tortilla pieces in this one to appease them (and make it count as an Easter bento as well. Score!). I put the fried snapper on a bed of spinach in one compartment, with the cabbage tomato onion orange pepper slaw next to it. The last section holds strawberries, sliced steamed Okinawan sweet potato, and carrots. In case you didn't notice the Easterness right away, the little chickies should give it away. Happy Easter! ^__^

Anpanman Egg Salad Sandwich Bento

We're baaaa-aaack! Did you notice a dearth of bento over here on this little page of the internets? We were on Spring Break last week. Anyone else? Yeah, it seemed a bit early to us too. But we did enjoy some time off to play and have some fun in the sun. We went to the beach, scarfed down the requisite shave ice and malasadas, and generally warmed up our winterized (well, California winterized) bodies. After a nice relaxing week, we're ready to get back into the bento habit! Actually, this one was from before the break: an egg salad on whole wheat sandwich thin with baby spinach. Couple of carrots, the usual pickled condiments, and a few berries make up the rest of the lunch. Happy Meal!
Okay, this photo was not taken by me (thanks and photo credit to Steve Anderson), but we saw some humpbacks breaching just like this, from shore. It was spectacular! And very "Life of Pi"-like: we also saw fish leaping over the waves and slow-floating turtles poking their heads up for a look around while they fed on coral reefs. There was even a report of a first ever shark sighting in the Ko'Olina swimming lagoons, but luckily we missed that.

Shamrock Pepper Fried Rice St. Patrick's Day Bento

Here's my contribution to St. Patty's Day, since it falls on Sunday and this will be our last bento before then. A four-leaf clover! Can we call it a shamrock if it has more than three leaves? My pepper happened to be four-lobed, so this is the shape we're going with. I fried a beaten egg inside the pepper ring, and then sprinkled some chopped spinach on top. It sits atop a bed of fried rice mixed with ham, edamame, egg and shoyu. I make sure to cook the pepper ring egg thoroughly, as it's not safe to pack uncooked egg for extended periods at warm temps. Alongside the lucky rice: cantaloupe chunks, and pickled cucumbers and onions. Happy St. Patrick's Day!

Warm Winter Curry Bento

After chili night comes... curry night! For some reason, these two seem to go together for me. I love this delicious curry; I used Just One Cookbook's recipe and method here, but added a lot more vegetables to mine, as you can see. For this batch, after browning the ground beef, I added celery, carrots, red capsicum, onion, garlic, and broccoli stalks. In the past I've used potatoes and even kabocha. You can make it as spicy as you like; the ketchup and tonkatsu sauce cuts the heat and keeps it kid-friendly. I packed the curry over rice in thermal food jars, alongside a separate container of satsuma mandarin (I LOVE these babies, have I mentioned?), tomatoes, broccoli, Okinawan sweet potato and sauerkraut. My 9-year-old gobbled up everything you see here. We've got rainstorms forecast for the next 4 days so I am starting to get more into the hearty kinds of meals these days. It's definitely fall around here now!

Bratwurst with Apples 'n Peppers LunchBots Bento

This one is another selection of little bites for TinySprite, this time in the super cool LunchBots Clicks series. This is the small set, which includes one stainless steel rectangular container with a 320ml capacity, and another one with a 480ml capacity. As you know, I am a huge fan of the other LunchBots, and I use the Uno, Duo, Trio and Quad regularly. I was very excited to see the company come out with a set like this: the same high quality sturdy stainless steel body but with a tight-sealing, gasketed lid. The lids click closed on all four sides similar to the way the Lock & Lock boxes work. The lids are made of translucent blue plastic and are completely leakproof! That's right -- your food stays in contact with stainless steel but is safely protected from spillage through tossing, dropping and inversion! I don't know about you, but this is just about as close to perfect as I can imagine. Besides this small set, there's also a medium size for adults or bigger appetites, and even a large set that would be great for picnics or roadtrips. How versatile is that? I'm very impressed.
For this meal I quickly grilled some brats alongside some sweet peppers/chopped apples/celery for the bigger box and layered some sliced stone fruit, berries and edamame for the smaller box. I think the amount of food here is perfect for my kindergartner's lunch and snack, plus she can manage the click-locking lids easily by herself. Total win!

Creepy Egg Skull and Rolls plus EcoLunchbox GIVEAWAY!

Let's keep going with the creepy skulls, shall we? This one is crafted from a hard-boiled quail egg, which is naturally skullish -- all you need to do is pinch the cheeks in a little and add some nori details. I made some turkey dog "sushi" rolls using black rice, and decorated the ends with freecut nori designs: bats and vampire faces. There are also some steamed broccoli and a little jack-o-pepper. I packed this bento for TinySprite in another stainless steel EcoLunchbox: this one is called the Solo Cube, and it's just the perfect size for my kindergartner. I packed this box along with the EcoDipper, containing some sliced peaches and berries. This size meal isn't too overwhelming for her, and she has no problem sliding off these lids. They stay on pretty well, but I secure both with elastic bands, just in case. I like the versatility that these two different shapes and sizes offer; you could fit a sandwich thin in the Cube, or some sausage skewers, some meatballs and pasta, or a chicken salad. The round Dipper is just right for a handful of nuts, trail mix, crackers, berries, or melon balls. I was so pleased with this duo that I mentioned it to the folks at EcoLunchboxes and they thought it would be a great idea to offer these two as a set to one of you, my bento-making readers! I know you'll love these as much as I do. They're well-made and look like they're built to stand up to years of daily use. If your child outgrows them, you can always use them for an afterschool or recess snack.

My kids have been taking bento to school their whole lives and I was amused recently to find my daughter bringing home disposable items (from a field trip) because she's so used to re-using.

Skull Onigiri Chili EcoLunchbox Bento

Are you getting into the Halloween spirit yet? I'm starting to... slowly! I figured it's time to start getting spooky so today I made a skull onigiri to go with the vegetarian chili (chock full of zucchini, corn, tomatoes, onion, carrots, and kabocha). I lay the chili on a lettuce leaf and put the skull on top. I made it kind of chunky so that there wouldn't be too much sauce to drip all over everything. I usually pack chili in a thermal jar, but I really wanted to use this cool new stainless steel Solo Rectangle box I got from EcoLunchbox. It's on the bigger side, simple and sturdy. I used a silicone cup, and these fit perfectly. They would be ideal for separating foods you want to keep apart. Besides the chili, I put in some cucumbers, a sprig of broccoli, and a mini red pepper. I put some homemade pickled cabbage, lotus root and cucumber in the cup. The lid to this box fits snugly, though not watertight, and I added an elastic band for extra insurance. Because I wanted to keep the fruit separate in case the chili moved around, I used an EcoDipper, a round lidded stainless steel half cup size container. Again, the lid fits snugly but I wouldn't use it to pack anything watery. It's perfect for a handful of fruit, though. This combo worked out very well for MisterMan. He swung his bag around, but since the silicone cup reaches the top of the box, the pickled foods stayed segregated. Although these boxes aren't leakproof, they are easy to use and should not pose a problem for your child to open and close. Having been a longtime user of Ecolunchbox products, when the company asked me to try out these newer products I didn't hesitate. I'm happy to share my experience with you, so you can feel confident before you decide to give these items a try. I've been packing bento for both a girl and a boy for almost a decade (wow!), and I have a good idea about what works and what doesn't. I have more to share tomorrow, along with a giveaway! Chickpea Cauliflower Curry LunchBot Bento

I decided to make a vegetarian dry curry today, using a recipe that called for simply tossing chopped vegetables with olive oil, curry powder and brown sugar, then roasting the whole thing in a baking pan at 400F until tender and fragrant, about 30 minutes. I used diced eggplant, onion, red capsicum, cauliflower, potatoes and chickpeas. It's a nice mild flavor that the kids can handle, and a good way to get them to eat eggplant. I served it over some fresh spinach leaves in their bento, but it's good over hot rice as well. It's on the dry side, which makes it idea for bento, with no thick sauce to drip all over everything. This Lunchbot Quad keeps the curry separate from the rest of the food, which includes: carrots, corn, Okinawan sweet potato and broccoli; strawberries and raspberries; and pluots and blueberries. I thought this was a pretty big meal for my kindergartner, and I was pleased that she was able to finish it all. Score!

Finger Food Skewers Bento

Didn't feel like cooking anything, and didn't feel like making a bento. Hmmm. Good thing TinySprite is satisfied with finger foods on skewers, like most kindergartners. I've stabbed all kinds of stuff, but chicken spinach sausages are ideal. These are nitrite/nitrate-free, and not spicy, so they're perfect for her. I alternated with mozzarella cubes, sweet red pepper chunks, and homegrown yellow pear tomatoes. Toss an assortment of berries into another section, and an assortment of colorful odds and ends of veggies into another, and I am done. Have I mentioned how much I appreciate these divided boxes? Besides the Lunchbot Quad, I also have this tight-sealing one that I got from Ichiban Kan ages and ages ago (when MisterMan was an infant!), and I still use it to this day. The foods in the separate portions stay separate no matter how you throw it around, and the lid will not come off until you take it off. It has a low profile and will slide into any lunchbag you've got, and I just love it. It's not cute, but it does the job. ^_^

Lamburger Froggie Bento

While MisterMan had his burger in the traditional way on a bun (or a whole wheat sandwich thin, anyway) my TinySprite had hers on a fluffy bed of hapa rice. Fluffy rice reminded me of a sheep, so I added some broccoli, steamed Okinawan sweet potato (for ears), and baby brown sweet peppers (for horns). I cut some red bell peppers for its nose and champagne grapes for eyes. The upper tier of the cute froggie bento contains sliced peaches, blueberries, strawberry, more champagne grapes, corn, carrots and a teeny little gala apple. I hope she didn't miss the bun and instead enjoyed her gluten-free version of lamburger/ramburger/hamburgerrrrr! ^_^
