Toast Of The Day: Colorful Tomatoes!


Nice to be able to look at my colorful toast and feel cheerful!
These are some of my favorite flavors, tossed together like a salad on a piece of crispy bread. Can you get rainbow-hued tomatoes where you are? It may be nearly fall, but just looking at this pretty snack makes me think of summer.

Mozza-Stuffed Turkeyballs Bento

Today's bento contains mozzarella stuffed turkey meatballs (which also include grated zucchini, onion, oats and flax), over pasta and broccolini. To stuff, simply place a cube of mozzarella onto a flattened patty, then add a dab of meat on top and mold it around the cheese until it's completely enclosed. If it's not completely surrounded, you may get some oozing out during cooking. I served it with marinara sauce, but omitted the sauce for TinySprite's bento, as she's not a huge fan of tomato sauce. I decorated with mozzarella sakura flowers, and the rest of the bento contains strawberries, carrots and blackberries. This one was a big hit!

Squash Blossom Pizza Bento

We made squash blossom pizza a la our favorite pie from Pizzeria Mozza and Scala's Bistro. I used whole wheat flatbread rounds for the kids' bento since they are such a cute size and perfect for little hands. I sliced the zucchini thinly, and sauteed briefly, then scattered on the flatbreads along with chunks of mozzarella. I layered fresh squash blossoms (a whole bag from my farmer's market for $2) on top and baked. For the adults I added peppers (Scala's uses padron) and for the kids I added garlic powder. Super yum! These happened to fit just right in the two-tiered stainless steel tiffin, and I was able to keep the fruit and vegetables separate on the top: corn, cauliflower, tomatoes, grapes, cherries and pluots. Looks like a pretty sunflower, kind of. ^_^

Caprese

Homegrown Lemon Boy tomatoes and Applause tomatoes, with homegrown (by my neighbor and transplanted by me) sweet basil. Fresh mozzarella. Fresh cracked pepper and olive oil drizzled on top. Is anything more refreshing and cool than caprese salad and a cool beverage on a warm summer evening?
