Domokun Sandwich Bento

For MisterMan's field trip today he had to bring a fully disposable bento lunch, so I turned to my favorite (recycled) strawberry pack. If you buy strawberries in boxes like this one, with a snap-close lid, you might find it useful to save them for similar occasions. They nest together pretty well and store neatly. I made a roasted red pepper and cheddar melt sandwich on bread so brown and rectangular it spoke a clear message to me: Domokun! So of course I had to comply. All I had to add was red capsicum mouth with radish teeth and halved grape eyes. RAWR!

I also added a ripe strawberry, some carrots and broccoli, and baby dills wrapped in ham. A few dark red cherries helped fill up the rest of the space, making sure everything stayed packed in pretty tightly. I stuck to mainly "dry" extras to avoid soggifying the sandwich. Everything got wrapped in wax paper before snapping shut the lid. So you see I was able to get away with really simple bento lunches this week. Something about summer makes me want to spend as little time as possible laboring over a hot stove, and this way the bento is nearly all utensil-free and kid-friendly. Happy long weekend friends!

Anpanman Sandwich Bento

Super fast and easy sandwich bento today, since we still have some slow-cooked pork. Sliced up, they make a tasty sandwich tucked with baby spinach between sandwich thins. And since it is a round surface, it spoke "Anpanman" to me. I cut his facial details from grapes and tomatoes, and squeezed some steamed broccoli in the corners to keep him secure. This snap-shut container ensures that the sandwich will keep fresh without drying out, but if I used a basket I would have wrapped the sandwich in wax paper.

The included side box contains fruits which stay separate so that the sandwich won't get soggy: strawberry, blackberries, grapes and a summer-fresh apricot!

Pirate Monkey Sandwich Bento

Another sandwich bento to round out the week. This sandwich is actually a double decker -- I sliced this wheat pan de sal bun twice since it was so thick, and layered it with spring greens, avocado, chicken and some of the spinach-arugula pesto I whipped up today. It's another recipe derived from The 10 Things You Need To Eat (by Lieberman and O'Connor). I used a bunch of blanched baby spinach, baby arugula, garlic, olive oil, lemon juice, walnuts and fresh grated Parmesan cheese. Blend all together and you're done. Mine is pretty thick, almost spreadable, so it's good on bread. It's also good tossed with linguine and shrimp, like we did for dinner. Into this box I also squeezed in a sweet sliced strawberry, some red grapes, and a mandarin. There's some steamed broccoli and carrot flowers too.

For the monkey, I sliced off the top layer of the bun with a sharp paring knife to make his face. His facial details are nori. The eye patch string is a piece of spaghetti and his bandana is apple. I really would have liked to make it checkered or dotted, but it would have been too much work. Next time! I just realized I forgot the monkey's ears, but look -- doesn't it kinda look like he's wearing pirate earrings?

Bunny Kimchi Fried Rice Bento

I made kimchi fried rice (Kimchi bokkeumbap), inspired by a twitter friend whose dinners often inspire mine! As an aside, I've found that twitter has given me cooking/food ideas/recipes on several occasions. Of course, I follow quite a large number of "foodie" types, so that explains it. Invariably the folks I've met and chatted with are always generous and helpful. It's been a great resource for me.

Anyway, back to the bento:
My kimchi rice is vegetarian; it's also mild, since my kids are heat-intolerant! But, not totally mild, since kimchi is in there! Also, being the healthy mom that I am, I added some nontraditional ingredients. I understand that the recipe can be fairly flexible and may include "leftover" kimchi and assorted vegetables. I began by sauteeing minced garlic, then adding carrot, onion and shredded baby bok choy. I also used minced kale! I've already mentioned how I add this ingredient to rice occasionally for added vitamin enhancement. This dish is so highly flavored, I doubt the kale is even noticable. I forgot the mushrooms, but this would have added a nice rich flavor. Then I put the cold rice in the pan and let it get crispy on one side before I began tossing it. This is because I love crispy rice. Then I added the chopped kimchi (napa cabbage type). You should add in the liquid from the kimchi as well, but as I mentioned I was wary of doing that. However, I could not avoid the liquid which was retained in the kimchi itself after I cut it. Okay, I could have, but I didn't. I really wanted the orange rice color. I also drizzled some shoyu and sesame oil for taste. If this were for me, I would have added a lot of gojuchang, but as it was, it was still pretty tasty. Top with chopped green onions and a fried egg, and it's a very satisfying meal!

I fried a quail egg in a metal bunny mold, and the yolk managed to stay in the exact center of the face. Now that I look at it, I wish I had used the yellow yolk as the nose. Wouldn't that have been cute? I almost forgot, the bunny makes this bento eligible for Hapa Bento's B.O.M.B. Yay! I added a nori face, some maroon carrot and peapod flowers, and I was done. The extras include cut carrots, a bit of broccoli, strawberries and black grapes.

Verdict? It was a hit :)

Horse Sandwich Bento

I sometimes don't bother posting the Monday bento because I am usually running late and the rushed bento doesn't look pretty...but this time I am posting it. It's a simple one; a quick and easy sandwich on a fluffy wheat bun. I fried some ham and an egg, melted cheese on top, and added a few baby spinach leaves. This sandwich bento box is a perfect size for it.

A few details turned it into a horse: broccoli mane, grape tomato and purple carrot eyes, maroon carrot nose, and a carrot smile. In the side box I gave him some red grapes, juicy strawberries and a mini mandarin. That's it! That's all I have time and energy for; and when I closed the box, the facial details smooshed down to stay in place. Yay!

Mini Sandwich Bento

I haven't made a mini bento in sooo long, and you know how much I love minis! Just had the urge to make a mini bento today. Well, I picked up a pack of Mini Toasts and thought they would be so cute as a mini sandwich. Usually I make mini-er foods than this, but this is a nice scale to work with too.

On the toasted breads I put two circles of smoked ham, swiss cheese, some mini curly lettuce, a mini slice of avocado, and finally I sliced some grape tomatoes and lay them on top. Looking at it now, I think I should have squirted a squiggle of mustard right on top of the tomatoes. Next time.

I cut some mini carrot sticks to go along with this healthy "lunch" on a tofu "plate". The whole thing sits on top of a mini mandarin, with red grapes and strawberries surrounding. I added a tree of broccoli for color too. Here's a closeup view:

Jook and Taiyaki Thermal Bento

Today's bento showcases a couple new things I got during New Year festivities, both in San Francisco and Los Angeles. We spent the past 4 day weekend roadtripping to L.A. to visit with family for New Year's and Valentines celebrations, and managed to slip in a bit of shopping too ^_^ !

First, notice the cute froggie thermal bento! I finally got one, since I've seen a few other bloggers use it, and it turned out to be perfect for this jook bento. I put jook (congee/rice porridge) in the thermal part with chopped scallions, and mixed stir-fried veggies in the upper smaller container. This little container has a lid of its own. You set it in the thermal and it sits on top; there's a larger screwtop handled lid which goes on top of it all.

Second, you'll notice his fruit box contains a new item: taiyaki! Along with mandarin, grapes and strawberry there lies a fish pancake, traditionally filled with red bean paste. I got a new taiyaki pan at Marukai in L.A.'s Little Tokyo last weekend, and couldn't wait to try it out! I used a whole wheat multigrain waffle batter and cooked it stovetop on my gas flame. It was pretty easy! I didn't expect it to go that well, so wasn't even prepared with fillings. But I did try chocolate, and that was gooood. I wasn't sure how much I could use without it exploding, but it turns out that the batter doesn't expand that much so I could have used a lot more fillings. I'll try that next time for sure. Oh, I almost forgot, can taiyaki count as pancake for Shrove Tuesday / Pancake Day?

Tiger Sandwich Bento

My Year of the Tiger bento!

Yes, he's a pointy-headed tiger. I'm pretty fixed on the pointy headed animals; don't know why. Maybe I should have made the ears bigger to compensate. Anyway, it's a sardine sandwich, made with tomato, basil, and celery, and I actually fit two sandwiches in this box. The lid is raised pretty high, so you can cram a lot of food in these little boxes.

In the mama box I put some kale I baked with olive oil, a la Steamy Kitchen, and it was crispy and awesome when fresh, but it probably won't be by MisterMan's lunchtime. It's okay. I'm betting he'll still inhale it :)

Finally, in the baby box I managed to squeeze in some blood orange slices, a strawberry and a tiny kumquat.

The photo is a bit busy, but I really wanted to use this bamboo forest fabric for my tiger bento, so that's how it goes. Here's how they look all closed up. It's a hippo family set!

Mini Pizza Bento

I made mini pizzas using pocketless whole wheat pita rounds, pepperoni, sun-dried tomatoes, cheese and shredded spinach. Since MisterMan is learning fractions this week, I was going to write "1/4" on each piece with asparagus, but they were too big and simply fell off. Later I realized I should have just used pepperoni. Next time.

Since this tiffin is quite deep, I was able to put all slices in the bottom and place the top tier on top. I filled the top, shallow bowl with a variety of fruits: red grapes, kiwi flowers, a mini mandarin, cinnamon apple hearts, and a grape tomato. The grape tomato is very important, as it allows me to enter this bento in the RED B.O.M.B.contest at hapabento's blog. Yay! I guess the tablecloth also counts too, right?

Ginger Scallion Fish Bento

Are you ready for Spring yet? I know I am. This bento has a bunch of plum blossoms to get us in the mood and signal to the world that we are ready for flowers (and sun)!

I steamed cod in shoyu, ginger and scallions with just a little cracked pepper and a final drizzle of sesame oil. At the same time I roasted some sliced yellow squash and broccoflower, which I placed next to the fish on the lettuce. In the next container I placed some purple potato chips (also roasted), a grape tomato and some red carrot flowers. All the veggies roasted together. I thought the purple might run off into the lighter colored stuff, but it held its color well. I brushed with olive oil and sprinkled with garlic powder during cooking and that's it. In the fruit section I put a strawberry, 2 cherries and a partially peeled mini mandarin. I was in the midst of peeling the whole thing like I usually do, but at this point I noticed that it looked like a little hooded creature! So I added eyes and a nose and put him in like that. Afterwards I also noticed that the cherry stems look like antennae, kind of.

This is a newish bento box that I got from a Korean market. It's nice because it has 3 sections as well as a transparent lid. The volume is 480ml, which is just right for MisterMan if I pack it full(ish).

Chili and Corn Bento

Today's bento has veggie chili with 3 kinds of beans, as well as chopped cauliflower and zucchini hidden within. If you do this, you might want to chop the veggies small enough that they are unrecognizable, depending on how astute your kids are. I got lazy and just threw in the chunks, so my kids immediately pointed out that those white things were cauliflower and not tofu, which is what my hubs initially assumed.

I also put in a piece of yellow corn. Doesn't it look bright and summery? I love yellow in bento. Besides corn, I like yellow carrots and sweet yellow peppers; I think this color really makes the food look cheerful and delicious :) I decorated the corn with a carrot flower and cilantro leaves. And because chili goes with rice, I put some in a little cup as well, with nori and ume furikake sprinkled on top.

We have some nice fruits in the house right now, and I was able to give him cherries, a big juicy sliced strawberry, and some kiwi flowers.

All packed up in my new Pokemon box!! Isn't it cute? I got it at Ichiban Kan, which I was surprised to discover is now carrying "designer" bento boxes now. They always in the past had stocked a few Hamtaro and Hello Kitty bento accessories, but usually the boxes were other, widely available brands. So, my boy will be happy to see this at lunchtime. He is still very excited about the Pokemon books these days ^_^

Field Trip Bento #2

Today's bento is completely disposable because MisterMan is going on a field trip to the Children's Museum. I usually pack a sandwich, boring as it may be, because it's the easiest thing for him to eat neatly whilst sitting on a bench somewhere in the windy, rainy, stormy weather we've been having lately.

In his whole wheat sandwich thin he gets a fried egg, ham, cheddar cheese and spring greens. I put a bear face on top to make it a little happier. The bear is made of corn tortilla and his facial features are nori. The crown is a piece of cheddar cheese. To make the face to stick to the sandwich, I melted some cheese on the back to "glue" it on.

I also threw in a peeled satsuma mandarin, a giant strawberry, and some cherries. I wrapped it all up in wax paper to keep it from drying out, and I used a grass baran to try to keep the sandwich away from the fruits to keep it from getting soggy.

For the container, I used a recycled plastic strawberry box, which I like because it has a lid which snaps shut tightly. Of course, there are holes all over the box, which is why I had to use the wax paper. Actually, I put the whole thing in another plastic bag with his water bottle, so that should keep everything from drying out too much before lunchtime.

Panda Rice Bento

Today I made roasted sweet miso chicken a la hapabento's recipe... although I changed it up a bit... and I added a panda rice musubi because as I've mentioned before, I really like chicken with rice! I think they go together like peaches and cream! Or hugs and kisses! Anyway. I think I'm convincing MisterMan of this, as he is eating the riceballs every day, and I'm not hearing any complaints :)

For the chicken, I only had skinless boneless thighs, so that's what I used. I marinated the pieces whole in equal parts white miso and agave syrup, which is the juice from the agave plant and a sugar/honey substitute. I forgot the mirin, but I added it just before cooking. I roasted at 450F in my trusty toaster oven for quite awhile; I think maybe 40 minutes or so. I even had extra room in there so I also roasted some mini sweet peppers at the same time (though those came out after about 20 minutes).

After the chicken was done, I also roasted some baby bok choy, another hapabento idea. I had previously accidentally roasted some brussels sprouts leaves, and discovered the crunchy leaves are kinda fun to eat. Have you ever tried it? So, I thought I would try the same thing with the choy. It didn't crisp up as well, but it still came out okay, and I think it tastes neat this way. My kids swiped it through the miso sauce, and I guess it was acceptable, because they ate it all.

I added some raw carrots for extra color, and in the fruit section I put some chopped fresh pineapple, cherries, and blood orange wedges.
This bento came home completely empty; all the lettuce and sauce included -- it looked like he had washed it already! I guess he liked it :)

Crab Friends Bento

For MisterMan today I made ma po tofu, but with a number of changes from the traditional recipe.

I used ground turkey, and I added chopped baby bok choy because I think it adds better color and nutrition. In addition, I had to omit most of the chili sauce due to the low tolerance level of the kids. However, I did add some! This is a big step, considering they used to cry whenever they tasted a chili pepper in months past. And finally, I don't make mine with lots of goopy sauce; it's actually kind of dry. We prefer it like this :)
All I do for my ma po is brown the meat, add some black bean sauce and chili garlic sauce, and cook a bit. Then add chopped fermented mustard greens, fresh chopped bok choy and stir to wilt. Then add in the cubed tofu. I used firm tofu just because the kids like it like that. I add some water for a little sauce, and thicken with cornstarch. You see, it's not like genuine ma po tofu, but it's close enough that I'm gonna call it that!

I gave him rice, so I could make two carrot crabs to display. I just got some new cutter toys, and wanted to try them out! They really make cute details a lot easier!

Finally, I made crinkle cut cucumber baran, a peapod flower, some romanesco and a cherry tomato. I put the fruits in a separate container so they wouldn't get sauce on them. He has a cute tiny mini mandarin, sliced kiwi and some cherries.

Oh, I forgot to mention that this is a new bento box from Marukai in Hawaii! It's stainless steel, with a tight-fitting plastic lid. I have these in lots of shapes and sizes, but this is the first time I've seen it in a flat square shape. It's shallow, so I can't fit large things in here, but it means that you can see everything pretty clearly in the shot. It's kind of cool :)

Christmas Tree Bento

Sticky rice, the sequel. When you make a big batch, it lasts a couple days! I formed a bowl of rice, putting the "fillings" underneath so I would have a plain rice top to decorate. I made a steamed broccoli Christmas tree, decorated with tiny carrot disc cutout ornaments. They aren't stuck on, so they'll probably scatter all over by lunchtime :) Tofu circles and halved tomatoes surround. Fruit bowl has kiwi and raspberry "holly" atop satsuma mandarins.

Sticky Rice & Wreath Bento

Made yummy sticky rice! Love to use sticky rice for bento. All the goodies are already in there, and the kids really like it. I added a small salad with marinated artichoke heart, carrot sticks, peapod vase with flower, and cherry tomato "wreath"! It's just a circle of tomatoes, but I'm calling it a wreath, and it's my festive Christmas detail in this bento :)

Snowfuman Bento!

Get it? Tofu-Snowman? Snow-tofuman? Hm. Okay, nevermind.
One more snowman bento -- I forgot to add him into the last post, but it's okay.. I think he may be my favorite. Doesn't he look happy? Maybe because he's making his final appearance in a long week full of snowman bento? Or because I finally managed one that looks kind of cute rather than "interesting"? Trouble is, since I have been in snowman mode so long I may have a hard time remembering other Christmas theme possibilities for this week's bento... Well. Anyway.

For this one I made ma po tofu using ground chicken, fermented mustard greens, green onions, black bean sauce and a little guilin chili garlic sauce ('cuz I love it, but the kids can't handle too much). Also, I roasted some asparagus in olive oil and garlic powder. I made the tofu snowman face with nori and carrot facial detail and purple potato hat with yellow carrot buckle on a bed of white/brown/black (Forbidden) rice mix. Raw carrot stars. Fruit section has kiwi flowers with blueberry centers, satsuma mandarins, strawberry and raspberries.

Is it cold where you are too? Snowman is happy about it, but I'm not! I am counting the days until we are on vacation.. to a sunny and warm spot on the globe where we can thaw out ^_^

Snowman Bento 'R Us!

I have finished up a week of Snowmen bento, as a kind of fun challenge for myself! I did a similar thing during Halloween, with jack o'lanterns. I think the results here were mixed, with some snowmen turning out cute and others, more - well - interesting. I'll post the series here, and you can decide for yourself! Which one do you like the best?

In this first one, I made TinySprite a snack bento featuring a snowman egg wearing a purple carrot scarf, and with nori facial details and a mini carrot stick nose!
Along with him, she gets a fruit selection of satsuma mandarin, strawberries, blackberries and raspberries. Also, some edamame skewers.

This guy is made of roasted baby potatoes, and goes with lemon garlic salmon and brussels sprouts, along with purple potato "chips" and starred fruits :)


This happy snowman is made of spinach ravioli with purple potato and purple carrot detail. There are those purple potato chips again!


Okay, the cauliflower snowman isn't quite as cute, but perhaps I can get some props for being adventurous? The fried egg sandwich and 4-bean salad was a hit, though!


The minestrone seemed to call out for a little riceball snowman.


I tried for a nashi (Japan pear) snowman this time, surrounded by fruit! He went with chicken and pickle wraps.

Mochiko Chicken Bento

Mochiko chicken using hapabento's recipe. Well, based on it...I deviated a bit, but I think it came out okay! The kids loved it, and since it was baked instead of deep-fried, it really wasn't that greasy. Thanks hapabento!

I used chicken thighs, and cut into smallish pieces, easy for kids to eat.
For the sauce, I mixed all together: equal amounts (4T each for my small batch) shoyu, flour, cornstarch, mochiko flour, sugar. Plus I added an egg, salt, minced garlic and finely chopped green onion (white part). Then I added to the chicken pieces and marinated for a few hours. As for the baking, I didn't get the pan super-hot like hapabento advised -- my olive oil was burning, and I should have used a different oil, with a higher boiling point, like peanut oil. So as a result it didn't "sizzle", and I was disappointed. It just quietly baked. Next time I will be sure to get the sizzle.

My boy also gets a rice "cupcake" with lavender purple potato "snowflakes" on top. The rice is actually just a thin layer of white on top -- underneath it's mixed with nori furikake. I also made more roasted brussels sprouts, and there's a "snowflake" satsumaimo and a cherry tomato. I know. It's just a star with holes in it. But I'm calling it a snowflake. Fruit square has grapes, a black plum, strawberries and blackberries.

A tip for really yummy roasted brussels sprouts: make sure you cut a deep "x" on top, toss in olive oil and balsamic vinegar, and make sure the vinegar gets into the heart of the sprout. Mix around a bit during roasting too, to make sure they are all well-coated. You will find that the brussels sprouts get nice and soft-crispy, with a yummy rich flavor. Even kids will love it! Try it, you'll see!

A kind of wintry-themed bento, with the snowflakes and all, esp. since the weather here has been very frosty! Though there are really few cute details in this bento, it was extremely tasty, which made up for it :)

The Floating Bento

I have powers of levitation that I put to use in my magical bento today...what do you think? Actually, the light blue background I used just makes it appear as if there's no background at all! Also, it must have been a particularly bright day. Now that the days are getting shorter, I find my pictures might be getting darker with more shadows. Since I have no professional lighting equipment, this lack of natural light must be reflected in my photos, *sigh*. Do you use high-wattage lamps? Or like me, is the quality of your photo dependent upon the weather?

MisterMan has standard vermicelli noodles with grilled chicken, cherry tomato, cucumber baran, broccoli, purple potato wedges and bursting yellow carrots. Fruit side has satsuma mandarins, grapes (underneath), kiwi, blackberries and raspberries.

This bento is so simple, but it includes my boy's favorite kind of food: noodles, so I know it will be a hit. As for the rest of it, as usual I just throw in whatever I have in the vegetable crisper, making sure there is representation of most of the color groups. This is for nutritional balance as well as aesthetics. Starting after this bento, I am trying to put a festive touch into each one. There are only a few weeks left until Christmas, so we might as well make the most of it, right? Happy holidays, friends!
