Beet Tofu Avocado Pickle Onigirazu

This one may be vegetarian but it's substantial and flavorful. I wanted to make a snack for TinySprite using some random ingredients I had from salads this week. So here's what I did:

First I put the rice (this one is a mix of black, brown, and white), then I placed some baby kale leaves to keep the sliced beets from making the rice soggy. Then I layered sliced tofu, avocado, pickled red cabbage and red onion, then topped with baby spinach leaves to protect the rice again. To the bento I added sliced pluots, raspberries and yellow pear tomatoes.

All packed up for TinySprite when she gets home from school. Happy Friday friends!

Toast Of The Day: Beets!

I know it's not a bento but my toast was just so good today I had to share it. I got the idea for this one from the cookbook Umami Bomb by Raquel Pelzel. The bomb is provided by the caramelized onions. I think I'll be adding it to all my meals from now on.

On this whole wheat pita: no salt cottage cheese, caramelized onions with thyme, pea sprouts, chopped beets, cracked black pepper.

Perfect. You should try this combo! 😊❤🍱

Mediterranean Life Without Plastic Bento

There's actually a theme to this bento, kind of, instead of just a hodgepodge of miscellaneous foods, for a change! It's also vegetarian. I was going to make a bento grain bowl, but then I realized I could use one of the dividers in this Life Without Plastic container to keep the fruit separate. So now it's a ¾ bento bowl. The cauliflowerettes and purple carrots are roasted with olive oil and whole garlic cloves over lentils and quinoa topped with halved cherry tomatoes; cumin-spiced crispy chickpeas; and a beet-yogurt romaine salad. The kids like these beets because of the vinegary honey yogurt sauce. Also, I told MisterMan that beets are a natural stamina booster, so he asks for it on P.E. days now!

The cut fruit are a variety of orange-fleshed honeydew called Golden Dewlicious. It's pretty good but not as sweet as cantaloupe. I think the summer season for melons might be drawing to a close pretty soon. We'll have to take advantage of the last remaining fruit while we can. So sad! Has Fall arrived yet where you are?

Crispy Spiced Chickpeas
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
Method:
Toss chickpeas with olive oil and spread in skillet (you can also roast in oven instead),
Fry (or roast) over medium heat until crispy, about 20 minutes.
Sprinkle with spices to coat all chickpeas.
Experiment with your favorite flavors, such as garlic powder, curry powder, cayenne pepper, Chinese five spice, Japanese togarashi - anything you like!

Beet Yogurt Salad
  • 3/4 pound beets (2 large or 8 small), trimmed
  • 3 tablespoons olive oil
  • 2 teaspoons sherry vinegar (or red wine vinegar)
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey, or to taste
Method:
Wash and dry beets, place in foil wrapper, and roast at 450F until fork tender, about 45 minutes, depending on size. When cool, rub off skins and slice into half rounds or smaller. Whisk together oil, vinegar, yogurt, honey, salt and pepper. Mix in beets - they turn the dressing a pretty shade of pink! Eat as is or atop salad greens of your choice.

Snail Pals Bento

Snail Pals Bento, originally uploaded by sherimiya ♥.
For MisterMan's bento today I decided to use the split pea / jade rice combo I cooked. I was hoping to end up with really green rice, but the color faded and I was left with slightly pale green pea rice. I made sushi rolls and cut two pieces for snail bodies. Too bad you can't see the nori spiral, but it's very cute. For the snail heads I steamed and cut a tiny baby potato in half, and added nori details. They are snuggling with some baby carrots.

Are you wondering what that red food is on top? It's yet another recipe from The 10 Things You Need To Eat (Lieberman and O'Connor) called Beet and Zucchini "Lasagne", although there're actually no lasagne noodles involved. It's pretty good, and a good way for the family to get a heaping dose of both vitamin C and iron. Here's the quick rundown:

Beet & Zucchini "Lasagne"

-Brown 1 lb. ground meat, season with s/p.
-Add oregano, minced garlic, and one 16 oz can of crushed tomatoes. Cook 15 min, then set aside.
-Combine 1 1/2 cups ricotta cheese with 1/8 t freshly grated nutmeg.
-In a glass baking dish approx. 7x11 inches, spread a layer of meat sauce on the bottom.
-Follow with a layer of beets (2 lbs worth, boiled, peeled and sliced 1/8 inch thick).
-Then a layer of zucchini (3 pieces, peeled lengthwise into ribbons down to the seeds).
-Then spread the ricotta mixture.
-Repeat the layering, ending with beets and zucchini.
-Top with 2 cups grated mozzarella, then bake for 30min at 375F until brown and bubbly on top.
What you end up with is a juicy meat and veggie lasagne, with the beet juice soaking into everything and making it sweet and tasty. I love beets, so it was naturally delicious to me. But the kids aren't necessarily beet fans, so I was happy that they dug in and got their fill of vitamins! For this bento, I cut small pieces for ease of eating. In the fruit section I put some sliced Cara Cara oranges and red grapes. We have been eating lots of the Cara Caras; I love their dark orange-red color and I'm so glad they're in such abundance here. My local market sells them for 25c each. :D

Finally, a couple pics of my jade / split pea combo, before and after cooking:
Happy Hump Day, bento friends!

Garlic Shrimp Bento

Garlic Shrimp Bento, originally uploaded by sherimiya ♥.
MisterMan has garlic shrimp, a superfast dish cooked in minutes on the stovetop in olive oil, garlic and lemon juice. Next to the shrimp he has romanesco, which I was so excited to find locally :) At the same market I also found arugula sprouts, and the two hearts are cut from yellow beets. Purple cauliflower, tomato/artichoke salad, peapods and purple/maroon carrot skewer. Fruit section includes strawberry, golden raspberries, dapple dandy plum grapes and blueberries.

This is one of my favorite bento boxes, because of its classic round shape, 3 divided sections, and transparent lid! All important aspects of a cool box to me. The topper would be if it had all those characteristics AND were made of stainless steel... but I am still on the lookout for such a thing. :)
