Eggplant Curry Thermal Bento

I packed eggplant curry in the LunchBot thermal; a perfect warm meal for a cold rainy day. See my method and recipe here. I made it once before and the kids seemed to like it fine. Previously I'd been afraid to cook okra because I know it can get slimey but the key is to add it last and then cook it only until it becomes tender; not too long. Also, don't toss it around too much. It will hold its shape and firmness, and it adds an interesting texture to this otherwise soft curry. You may be seeing a lot of this and our other thermals for the next several weeks, at least until the weather starts warming up. Since discovering the practicality and usefulness of thermal food jars, I am hooked. Since there are so many veggies in the meal, I can pack the other dish with colorful fruit and fun Okinawan sweet potato cutouts.

  1. Hmm! Curry is perfect for cold rainy days! I never tried okra in my curry... actually, it is super unusual to find okra here ^^. I believe Finnish people would get too afraid about the slime *LOL*!

    1. I never cared for okra until I had it with Indian spices (masala) and now it's my favorite Indian dish. I didn't realize my grocery carried it until now because I never wanted to cook it. But once you get past the slime, it's delish!! Thanks L!

  2. The slime is the best part! I swear I get giddy when I cut into it and it coats my knife. That's what makes gumbo, well, gumbo! It doesn't seem slimy to me breaded and fried, though, and you can add spices to the breading if you like. I like mine breaded with cayenne pepper-seasoned cornmeal.

    Also, I think okra plants, when blooming, is pretty enough to be in a flower garden. The big, dual-toned blossoms are one of my favorite flowers.

    And now that I've sung the praises of okra a bit too long, I should say that your lunch looks terrific!

    1. Oh, I think that's the first time I've heard anyone say the slime is the best part! It's true that the slime makes the gumbo as thick and delicious as it is, though. I think the quick breading and frying probably cuts the slime ooze factor, and that's a great idea for folks to try the first time. And I've never seen okra plants. Now you have me curious!
