Won Ton Bowl Bento
Another bowl type bento today; this time in an actual round bowl. I really like this apple-shaped two tier metal container. It's cute and handy and just right for meals like this. I lay some soba noodles on the bottom, added shredded romaine lettuce, cilantro and green onions, then topped with as many won tons as would fit. You can drizzle a little shoyu, chili oil, and black vinegar, or use a separate condiment bottle for that. I have a current obsession with scallion ginger sauce so I ate mine with that - SO good. One day I'll share that with you but that's for another day. Since there aren't too many fruit in season right now, I cut some red grapefruit. You might think it sounds tart and sour but they are actually quite sweet! I know some folks sprinkle sugar on top but trust me, you don't need to. If it's not sweet enough for you, maybe toss in some oranges (or squeeze some juice over). I hope you try it!
Won Ton Filling
1 lb ground meat (I used turkey but pork is traditional)
1 scallion, chopped
1 t grated ginger
1 clove garlic, minced
1 T shoyu
1/2 T cornstarch
1 egg
Mix all together and fill dumpling skins. You can change the amounts of the ingredients to suit your taste. Drop in boiling water and when they float to the surface, wait 30 more seconds and lift out gently. Serve with soup, noodles, or just as is.

Chicken Rice Salad Bowl
Welcome to my current favorite kind of lunch: the protein bowl! I like it because it's very simple to make and the only rules are that you should use as many different varieties and colors of fresh and minimally processed foods as you can. I like to use a whole grain carb base like rice or pasta, salad greens, cruciferous vegetables, fruit, and protein.
There are tons of cookbooks offering great ideas for protein bowls, and I got the idea for this bento from Bowls of Plenty by Carolynn Carreno.

Vietnamese Bowl with Sweet and Tangy Vinaigrette
Marinade:
1/4 C rice vinegar
1/4 C sesame oil
2 T soy sauce
2 T honey
1 lb. skinless chicken breasts, thin
Marinate chicken for 2 hours, then cook chicken until caramelized, 3 minutes, then turn and cook 5 minutes more or until juices run clear. Rest for 5 minutes before slicing. Lay over rice, add shredded cabbage, carrots, and other vegetables of choice (I used brussels sprouts and grapefruit segments). Serve with vinaigrette.
Sweet and Tangy Vinaigrette:
1/2 C canola oil (or other neutral flavored oil)
1/2 C rice vinegar (I also added ume vinegar)
3 inch fresh ginger, grated
3 T lime juice
1 T honey
2 garlic cloves, minced
For this Ecolunchbox Solo Cube I used chicken marinated in this vinegar shoyu sauce and then pan fried in a skillet. You can use other kinds of protein too, such as shrimp, beef, or even tofu. I made a mixed rice composed of brown rice, red rice, barley, black rice, and quinoa. I also added a tossed salad of shredded cabbage, grated carrot, and grapefruit segments. You can pack along this fresh citrusy gingery vinaigrette in a separate container to drizzle at lunchtime. Pan roasted brussels sprouts and halved grape tomatoes round out this square bento. So good, and good for you too!

Sticky Rice Lup Cheong Bento
Too spent from the activities of the weekend to think about cooking? Sticky rice is one of those one-pot meals that can be thrown together without much planning, which is why I like it so much. See my method and recipe here. I make mine in my rice cooker, tossing the chopped lup cheong, char siu, bok choy, shiitake (and sometimes even kabocha) at the last 15 minutes or so of cooking. I leave the heat on past cook time, just to get the rice on the bottom to burn just a little bit, getting a little crunchy. So good like that. This meal is perfect for bento because it's just as delicious at room temp as it is fresh out of the rice cooker. Sometimes I pack it in a thermal jar, but it's tasty in a regular bento box, like here, too. I topped it with a heart-shaped Okinawan sweet potato, and added plum wedges, a sprig of broccoli, a sun sugar tomato (from the backyard vine -- still growing!), and a grape-grapefruit salad which I hoped would go over well. It didn't. She brought all the grapefruit home. Ah well. Can't win 'em all. ^_^

Daytrippers Pasta Bento
Happy Monday! Are your Mondays as disorganized and chaotic as mine? No? Oh. Well, this is why you'll find many of my Monday bento are composed of food that cook easily from ingredients that are already in the pantry and refrigerator (or leftovers from weekend eats), and nearly always have no cute components whatsoever. Sometimes they are literally thrown together so quickly that there's no time (or need) to take a picture. Like today: it's a simple wagon wheel pasta bento tossed with nitrite-free chicken and roasted red pepper sausage and zucchini. Other section contains strawberries, grapes, grapefruit and tiny mandarinquat slices. Everything is packed in my Daytrippers bento box (from Paperchase), which comes with a separate section for the matching fork and spoon under the cute decorated translucent lid. TinySprite has a variable appetite, which grows when the meal includes her favorites. Like this one -- I know she loves this combo and it will disappear in no time, even without the cute parts. And that's a recipe for a successful bento ^_^

Heat Miser and Hermey Mac 'N Cheese Bento
Okay, I'm almost too embarrassed to tell you about the mixed-up bento today. Almost. But it's done, and I didn't even think about checking the facts until afterwards. So confident was I! Anyway, I woke up wanting to make Mayor Burgermeister Meisterburger (remember him?) from the animated Christmas TV Special Santa Claus is Comin' To Town. It's a great one, right? But then I remembered the Heat Miser, and started singing his awesome song. You know the one: "Friends call me Heat Miser, whatever I touch - starts to melt in my clutch! I'm too much!" So then I decided to make him. But then I remembered the little misfit elf dentist-wannabe from the Island of Misfit Toys, and.... I think you may be starting to get the picture that I have TOTALLY mixed up all the stop-action Christmas TV Specials. But did that stop me? Noooooo. Never mind that Heat Miser was from The Year Without A Santa Claus, and Hermey the elf was from Rudolph The Red-Nosed Reindeer. They are both going in my bento; so there! Luckily the Mac and Cheese is a definite hit. I made it the way I did last month (in this bento), mixing in broccoli and diced kabocha to boost the nutrition. I also crumbled in some soyrizo, which is a chorizo soy substitute which adds spice and flavor. Super good. I packed it in my cute apple-shaped bento bowl, with the top tier holding the grapes, grapfruit, carrot, broccoli, and two quail egg Christmas characters who have NEVER ACTUALLY MET before this very day in MisterMan's bento. Pretty incredible day for them, I'd say. Wonder what they'd talk about? ^_^

Jack Skellington Chicken Bento
Today's menu is tebasaki (grilled - or in my case broiled - chicken wings with sea salt). See the method and recipe I used here. When I make it, I always have to make several pounds (yes, you read that right) because I tend to snack while cooking. To monitor quality, of course. I sprinkle mine liberally with shichimi togarashi (Japanese red pepper mix), which makes it totally addicting. Even though the kids eat theirs plain, they are very tasty just with the sea salt. They can eat 10 or more wings each, and I packed their bento as full as I could, while still including pan-fried garlic kabocha, tomatoes, and Okinawan sweet potato. The fruit cup contains grapes and grapefruit, and a quail egg Jack Skellington wearing a mini sweet red pepper and radish santa hat. I was going to make Sally too, but after cutting out all those tiny features for Jack, I was done! I'm really not one for itty bitty nori cutting. She would have been very cool-looking though, so I'll have to make her another time for sure :)
