Toast Of The Day: Avocado, Cheesy Eggs, Hummus & Tomato!


Why did it take me so long to discover cheesy eggs? My feelings toward scrambled eggs have changed forever. 


You guys might already know this, but the key to fluffy eggs is to cook low and slow. That is, low heat with constant stirring until you feel the liquidy cheesy egg start to develop form. I mixed my egg with a big spoonful of cottage cheese; you could use ricotta or whatever cheese your little heart so chooses. At that point, turn off the heat and let finish to your desired fluffiness. If you want to pile sky high on avocado toast, who's stopping you? 


And then just because I happened to have a pretty gradient of grape tomatoes, I made another toast on hummus. Come to think of it, I could have combined everything into one deliciously massive towering architectural wonder.

Breakfast For Lunch PlanetBox Bento





Working the PlanetBox Rover again, we played out one of our favorite themes: breakfast for lunch. Today's included pan-fried sausage and hard-boiled eggs. I guess the plain tart yogurt with fresh fruit topping (and pumpkin seeds) falls into the same category too. A side salad of chopped romaine, cherry tomatoes, parmesan and fresh ground pepper pulls the whole thing into a more lunch-y type mode. I'd say. The yogurt is completely sealed inside the big dipper once the box is latched, so there'll be no leakage. I omitted dressing on the salad, because that won't stay in the section. If you so desire, you could send dressing along in the little dipper, which would sit in the section where the egg is (and there is definitely enough room to double up the eggs and squeeze it in. Quick and easy! I'm really liking this box already.

Omelet Wrap Bento

Mushroom onion spinach omelet in whole wheat tortilla wrap with spring greens and avocado. Other veggies include: cucumber, sweet potato, purple and gold cauliflower, tomatoes, peapods, romanesco and satsumaimo. Fruits include tiny strawberries, blackberry, satsuma mandarin, and black grapes.
I was so happy the wrap fit so perfectly in this box, yay! Too bad the skewers had to come out, but the lid pressed down on the wraps very securely so they wouldn't unwrap before lunchtime :)

I always forget how useful and versatile eggs are. Besides hard-boiling and shaping into cute molds, or spreading as egg salad, they can be cooked into a healthy and filling omelet by adding your choice of veggies and / or meat. Here, I should have added tomatoes or red peppers for a nice color. Adding a tortilla and turning it into a wrap makes the omelet neat and easy to eat for little ones. I personally really like the wrap idea, as it can be used with lots of different fillings; cream cheese, smoked salmon, leftover chicken or other meats, cold cuts, even PB&J or other traditional sandwich spreads. The only limit is your imagination!
