Toast Of The Day: Avocado, Cheesy Eggs, Hummus & Tomato!


Why did it take me so long to discover cheesy eggs? My feelings toward scrambled eggs have changed forever. 


You guys might already know this, but the key to fluffy eggs is to cook low and slow. That is, low heat with constant stirring until you feel the liquidy cheesy egg start to develop form. I mixed my egg with a big spoonful of cottage cheese; you could use ricotta or whatever cheese your little heart so chooses. At that point, turn off the heat and let finish to your desired fluffiness. If you want to pile sky high on avocado toast, who's stopping you? 


And then just because I happened to have a pretty gradient of grape tomatoes, I made another toast on hummus. Come to think of it, I could have combined everything into one deliciously massive towering architectural wonder.

Flatbread Pizza and Jacks Bento

Yes, I know we just had flatbread pizza like, 2 weeks ago, because I see it in my flickr photostream there. Actually, we've had it even more recently than that for dinner. Okay, we probably have pizza and calzones every week. The kids clamor for it, and they love it, and it's so easy. I'm thinking we should have been doing this all summer, in fact. Today's version is meatless. We used zucchini, baby portobella mushrooms, cherry tomatoes, mozzarella and basil. I added steamed corn and broccoli, a bat-shaped Okinawan sweet potato, pluots, strawberry, and carved orange cherry tomatoes. I carved these tomatoes into jack-o-lanterns for our twitter tomato party, and decided to use them in the bento here for festive fun. Is it too early for jack-o-lanterns and Halloween decorations? Last year I was on a mission to carve as many jack-o-lanterns as I could, from as many orange foods that I could find. You can see the collection in my set here. (I also did it in 2009, here.) I discovered there are quite a few orange colored foods that can be carved. Should I continue the tradition? ^_^

Here's a tutorial I made showing how I carved a mini sweet pepper. The technique is basically the same for, well, all the little foods I carve into jack-o-lanterns. ^_^

Caprese

Homegrown Lemon Boy tomatoes and Applause tomatoes, with homegrown (by my neighbor and transplanted by me) sweet basil. Fresh mozzarella. Fresh cracked pepper and olive oil drizzled on top. Is anything more refreshing and cool than caprese salad and a cool beverage on a warm summer evening?

Garden bounty

Can you guess what this lovely basil will become? hint: in combination with ripe tomato... and with fresh mozzarella and fresh cracked pepper with a drizzle of olive oil...

OK, not just a hint ~ it's no secret that I love caprese salad, and it ranks as one of my favorite all-time salads.
