Shrimp and Mushroom Power Bowl


Today's power bowl has tasty protein and vegetables, and whips up in no time. I got the idea to add roasted mushrooms to everyday dishes (like pasta, salads or sandwiches) from a cookbook I was reading this week. I'll let you know my impressions after I try out some of his recipes.


I cooked almost everything you see here in the same pan on the stovetop, including toasting the peanuts, and each separate ingredient only took a few minutes. The mushrooms are a mix of black trumpets, portobellos, and porcinis. I seasoned with garlic and pepper, as well as a splash of ginger soy dressing. So delish!

The taro chips I tossed on a baking sheet in the toaster oven with some olive oil. You have to watch those to make sure they don't burn, but they only take a few minutes as well, if you slice them thinly.

Salmon Bowl


Here's something about me: I really enjoy bowl eating for aesthetics as well as practicality. It's so easy to throw everything on top of a bowl of rice or salad greens, especially when I want a variety of flavors at the same time. And I like the way it looks all colorful and pretty. 

I make fish at least once a week and it's usually salmon although sometimes we'll have cod, sardines, or tuna. Or anchovies tossed in pasta or salad. I pan fried this salmon last night and sliced it cold into my bowl. I kinda like everything cold like this sometimes, especially when I get back from working out or if it's a warm day.

Duck Fried Rice Ghost Halloween Bento Bowl

TinySprite gets roast duck (from the Chinese deli) fried rice with egg, choy, and green onions in her panda donburi bowl. She loves fried rice so much; why don't I make it more often? The top tier holds some baby strawberries, a smattering of grapes, and some Asian pear sliced into ghost shapes. The little musical picks celebrate her joining choir this quarter, which she has wanted to do since last year. Yay!

My "dry" ma po is perfect for bento because it minimizes leakage in bento format. I served over rice in the cute apple bento bowl, and you can top with chopped green onion or cilantro. Since my version is almost chili-free, I add spicy chili sauce after the fact into my own bowl. The top tier contains chunks of super sweet cantaloupe and scattered strawberries because we're kind of low on fruit these days. The kids gobbled so much down there wasn't any leftover at all for my next day lunch. Aww!

Sticky Rice Ono Bento Bowl

I love the sticky rice bento. Well, I love sticky rice (see my method and recipe here) for dinner first of all, because it's super quick and easy. Chop everything up and toss it into the rice cooker about 15 minutes before the rice is done. This batch has half brown and half white sweet mochi rice, and I added lup cheong, char siu, shiitake mushroom, baby bok choy, onions, and then sprinkled chopped scallion on top after. I have also added fried garlic or cubed kabocha squash before as well. I packed MisterMan's bento in the cute apple bowl, with the top tier holding an artful (to me) arrangement of plums, grapes, and pickled cucumbers, onions, carrots and daikon. Our bento these days often look like this, with no special touches other than the colorful naturalness of the variety of ingredients. MisterMan has been making his (and his sister's) bento recently, and I think his work is starting to look just like mine. So proud \(^__^)/

Tacorice Bento Bowl

You know that tacorice is convenient for bento (donburi rice bowl-type bento), is easy to make, easy to eat, and delicious, but did you know it's also a great gluten-free tortilla-less version (in case you're concerned about that)? Yes, it's true. For this bento I put a green lettuce leaf in the bottom, followed by a scoop of rice (it happened to be black rice, but you can use white or brown rice as well), then topped with taco-seasoned ground meat of your choice, shredded cheese, chopped onion, tomatoes, and cilantro. You can also add sour cream and sliced avocado if you so desire. I love this bowl type of bento; if I were making my own bento, I'd definitely make myself this type of bento very often. The cool thing about this apple bowl is that it comes with a top tier that sits loosely over the bottom section. I arranged some grapes and plum wedges in there, and screwed the lid on. It's not a watertight box, but that's not essential for this kind of food. We're closing out the week, and I have yet to make a Halloween bento...ooops! Next week. I think. ^_^

Hello! Today's bento is for MisterMan and it's a rice bowl. I made a carnitas bowl: hapa rice (half white half brown plus quinoa) topped with shredded lettuce, diced tomatoes, carnitas (slow-cooked pork fried crispy), and cheese. You could also add chopped onion and cilantro, or salsa and avocado as well. Like tacorice, it's perfect for a donburi-type bento box, and so much easier to eat than trying to hold the ingredients inside a tortilla. The kids love eating rice bowl bento. And luckily, I have this stainless steel apple bowl for him and a panda bowl for her. I love the simplicity of packing these; you can just toss everything together and you're done. The upper tier contains blueberries, lychee, carrots and strawberries, and an Okinawan sweet potato crown. They conquered their first week of school and were victorious! I only hope the rest of the school year goes as smoothly. Super glad it's Friday tomorrow though -- happy weekend friends!

Bolognese Panda Bento

Who says gluten-free has to be boring? Here's a bento for TinySprite I whipped up quickly using leftovers from dinner: pasta bolognese (naturally gluten-free) tossed with brown rice tube pasta, topped with romano and parmesan, and oregano. She's a meat lover, this girl, and meals like this are very satisfying for her. I'm happy to be able to pack it in her favorite panda bento bowl. She had previously asked to "always use this box please" - so I'm trying. The upper tier contains some super sweet dark cherries, a couple of pristine white lychee, Okinawan sweet potato flower shapes, a baby homegrown white peach, a homegrown apricot, some black splendor plums, and fresh corn off the cob.

Bolognese Sauce (from Real Simple)

1 tablespoon olive oil
1 large yellow onion, diced
3 stalks celery, diced
1 carrot, diced
4 cloves garlic, minced
1/4 pound pancetta, chopped
1 1/2 pounds lean ground beef
1 cup dry white wine
1 cup whole milk
1 6-ounce can tomato paste
1 14 1/2-ounce can diced tomatoes, undrained
1/4 teaspoon red pepper (I omitted)
2 tablespoons chopped fresh oregano, or 1 tablespoon dried
1/2 cup fresh flat-leaf parsley, chopped
2 1/2 teaspoons kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg (I omitted)
1/4 cup grated Parmesan

In a Dutch oven, over medium heat, heat the oil. Add the onion and cook for 2 minutes. Add the celery, carrot, and garlic and cook for 5 minutes more. Add the pancetta and cook for 5 minutes, then add the beef and cook until brown. Add the wine and the remaining ingredients and simmer for 45 minutes. Serve with cooked pasta. Sprinkle with Parmesan.

Panda-monium Ma Bo Tofu Bento

We're having a meat week, following up the sausage pasta with ma bo tofu (I adapted Lovelylanvin's recipe), complete with a pair of tofu panda friends. I adapted the traditional recipe quite a bit; in fact it may not resemble actual ma po tofu much anymore. I have to omit all the chili bean sauce because the kids won't tolerate the spice, and I always add greens. Today I chopped half a bag full of baby bok choy, several green onion stalks and cilantro and mixed them in for texture, color and nutrition. Sometimes I use pickled mustard greens as well. Also, there is less sauce in mine, to keep it more bento-friendly. If you wanted to keep the soupiness, it would be better to pack it into a thermal food jar. But for us today, this donburi bowl-type bento box works just fine! Top tier contains all fruit: strawberries, grapes, kiwi, blood orange and little mandarinquat. If you've never seen a mandarinquat before, here's a photo, beside some yuzuquats and a standard satsuma mandarin for size comparison. The hybrid quats taste like kumquats, but slightly different. I think kumquats are the tartest, but it could be just me ^_^

Pretty Quinoa Salad Bento Bowls

This is the third meatless bento so far this week. Wow! I didn't plan for us to go meatless this long but decided we could try it and see how it felt. So far I haven't heard any complaints at all. Today's bento was inspired by a recipe I saw over the Christmas break which looked like bibimbap to me, or a kind of somen salad. It's actually a red quinoa salad, topped with wilted spinach, parboiled carrots, edamame, cucumber strips, wakame and fried egg. I packed along a little cup of vinaigrette dressing for them to pour over right before they eat. The top tiers contain fruit: oranges, strawberry, blackberries and cherries. I'm showing both kids' bento because they're so pretty. Fresh and colorful, almost like a warm weather cold salad. I really will start making more hearty bento meals, but the weather has been so mild and warm lately that I just haven't thought of it. They haven't even been wearing jackets when I pick them up. How's winter where you are?

Chili Rice Panda Bowl Bento

This was the result of my last crockpot meal: turkey chili with beans and vegetables. And this bento is MINE! I packed the two kids' lunches in their thermal jars in the morning, and didn't feel like taking the time to snap a picture. I don't know when the last time was that I made a bento for me, but I am going to start doing it more often. I used the cute panda bowl bento set, which is perfect for rice bowls. When I was a kid growing up, my favorite thing to get at Zippy's was chili rice. That's how you order it: chili rice. I loved it for a long time until someone told me you get a lot more chili if you order chili cracker instead. I can see the logic there. After all, there's only so much chili you can pour over a giant scoop of rice. So I switched to chili cracker, but I always loved chili over rice. So I made it for myself. This chili is so jam-packed with healthy stuff you practically get younger after you eat it. There's tomato, carrots, zucchini, kidney and black beans, ground turkey, onions, sweet peppers, and kale. I topped mine with grated cheddar and a sprinkling of cilantro. Really hits the spot on a brisk fall day, don't you think? And I prepared a fruit tier for myself too: fall pluots, cantaloupe balls and three raspberries. And I cleaned it all up!

Slow-Cooked Turkey Chili

1lb. ground turkey (or whatever meat you like, or you can omit this entirely)
2 cans kidney beans, black beans, white beans, or other beans of your choice
1 32-oz. can crushed tomatoes
1 8-oz. can tomato sauce
1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, chopped
1 carrot, sliced
1 bunch kale, chopped
2 zucchinis, chopped
1 tsp. chili powder (or 2 tsp, if you like)
salt, pepper

Brown the meat in a skillet and drain. Add to slow cooker along with all the other ingredients. Cover and cook on high for 4 hours or low for 8 hours. Garnish with cheese if desired.
