Both kids took leftover enchiladas for bento today. I made a big batch so there would be lots of leftovers. These are filled with shredded boiled chicken, onions and cheese, rolled in corn tortillas, then smothered in red sauce (not homemade), mounded with more cheese, and then baked. The adult version had diced green chiles inside too. I topped MisterMan's bento with chopped cilantro and tortilla ship cutouts, while TinySprite's had little flower shapes. I also pre-cut hers for easier eating since this is not a very "neat" meal. Both kids got an assortment of fruit and veggies alongside. I put in those cute airplane and balloon picks (actually bookmarks) because, I don't know, that way there would be a transportation theme or something. Easy!

I have never tasted an enchilada but these are so tempting! And so pretty.. although all that cheese might make my lactose-intolerant tummy mighty upset. lol.
ReplyDeleteYes, enchiladas are probably not recommended for the lactose-intolerant, but are a big hit with the cheese-lovers. As TS likes to sing: "I love cheese-so-muuuuch!"

ReplyDeletenot sure if i mentioned but a friend of mine has developed a gluten sensitivity, so i have been doing a little GF experimenting of my own... in all the excitement over the available GF mixes and alternative flours, etc., sometimes i forget about good old corn. how comforting that there is something familiar and already in our cooking repertoires that we don't even have to alter for our non-gluten-eating loved ones.... mexican (or cal-mex, or tex-mex, or whatever variation)!

You and me on the same wavelength Megan; love it. I never thought I'd need to think about GF but it turns out to be quite the learning experience. Mexican food is one area that we haven't had to change too much (missing our Italian / pizza outings though) so that's a good thing. Very good thing we're not dairy-free too! Yay cheese!
