Shoyu Chicken Bento

Does your family have a favorite "go-to" dinner menu? Over here, one of them is definitely shoyu chicken. As soon as my boy smells the telltale sauce he says "Yum! It's the sweet chicken!" I used chicken thigh pieces and also added baby potatoes during the 30 minute simmer. After it was cooked I sliced the chicken into more manageable pieces for him to eat in his bento. A quick time-saving tip: you can steam the broccoli and peapods in the same pot by placing them atop the chicken pieces towards the end of cooking. For this bento, I put the chicken, potatoes, broccoli and peapods on top of a green lettuce leaf. I added a cherry tomato which I cut open and stuffed with rice for fun, and decorated with a few maroon carrots cut into flower shapes.

The other side has a cup of red leaf lettuce salad with cara cara oranges and sunflower seeds, and a cup of cottage cheese with chopped strawberry and wheat germ. I made extra chicken to perhaps give him a followup repeat bento, thinking he'd request it, but when he came home today he informed me that today's bento (smoked salmon bagel thins) was "the best bento EVER!" Huh? Okay, so I guess I don't even have to cook to make the best bento ever ^_^ !

  1. haha i coulda told you salmon bagel was the "best bento ever"-- but shoyu chicken is a great go-to and a tasty bento treat as well. love the pretty fruit cups, and that tiny stuffed tomato made me squeal out loud!

    Thanks Susan! I know! He's so sweet....really the only thing that consistently comes back is rice...so I hope the tomato makes this one acceptable!

  5. Seeing how cute the stuffed tomato is, it will probably be eaten, rice or no rice :o) And considering his rating of yesterday's salmon bagel bento, I can only note that MisterMan has great taste :o)

    Thanks bentobird! Was that a popular snack for you? I always think of cottage cheese/fruit as a diet fad of the past, with a bad rap for being yucky. I actually like the curd texture :)

    I didn't post the recipe for shoyu chicken; there are only a few ingredients -- but the amounts can be tweaked to suit any tastes. You could ask anyone in Hawaii for theirs and it would taste different from everyone else's. Really! So feel free to experiment for yourself. Here's what I used:
    For 4 pounds of chicken:
    1/2 C shoyu, 2T honey, 1/2 C brown sugar, 1 1/2 C water, 2in piece ginger, 2 cloves garlic. Add all ingred to pot, bring to boil, simmer 30min. Remove chicken. Bring liquid to boil, skim off fat, add a cornstarch mixture to thicken to taste. Pour sauce over chicken and serve. You can also add green onion, oyster sauce, or 5 spice too! Each adds distinct flavor. Have fun!
